A quick meal, all rolled up into one.
My husband and are "retired" as in we have more time to stay busy.......LOL
Anyways, he and I concocted this for a quick lunchtime or light dinner on the weekends. It's easy and takes one pan and a griddle (or however you heat up tortillas). One steak.......sirloin, cross rib or what ever you have lingering in the freezer......lol or even leftover steak will work. Make sure a majority the fat is trimmed off. an onion and a pack of already sliced up mushrooms, they have to be fresh ones none of those icky canned ones. Slice the steak into thin slices maybe 3' long pieces. Slice the onion into thin slices Open the mushroom pack up. Thinly sliced Cheddar or Monterrey Jack cheese. Flour, Corn or those yummy Corn/flour tortillas. I use less than a TSP. of olive oil in the whole recipe. A little olive oil in a non stick pan, when the pan is heated up. Throw in the onion cook till however you like the browned. Take the onions out of the pan when they are the way you want them cooked. Add a tad more olive oil into the pan. Throw in the mushrooms, cook them till they are either browned or done the way you want them. I add a couple of dashes of soy sauce (low sodium) in there too. Remove from pan. Add the steak cook until browned, toss in the onions and mushrooms heat through. Prepare tortillas as desired. To assemble.... Tortilla, cheese and steak mixture, roll up and eat. I splash on a little bit of Chipolte hot sauce on mine, my husband uses ketchup. ENJOY!! |
Sounds quick and tasty! Could do the same thing and replace the steak with chicken.

Sounds really tasty. How do people generally warm up a tortilla? Do you warm it before or after filling it? Thanks!

Warm it before so it is flexible.
BTW, I do something very similar to this but I use caramelized onions that I make in the crockpot. I make a big batch, freeze them flat, and then break off as much as I need for whatever I'm making. I also will slice leftover steak and freeze it the same way - just pulling out what I need for a single sandwich (or tortilla). You can google for the onions in a crockpot recipe.

WOW Chasing Hawk you must really have HUGE steers in the Pacific Northwest to be able to cut 3 foot strips of steak. we can not grow them that big here in ontario, canada hahaha
