I put a pound of quarted red potatoes in a microwave safe casserole dish. I add a 1lb bag of thawed frozen vegetables and leftover meat, sprinkle on one tsp of Cavender's All Purpose Greek Seasoning (I usually add more, but start with this amount, you can taste it half way through the cooking time) and one Tbl spoon of olive oil, toss and microwave for 4 minutes toss again and cook for another 3 minutes. The potatoes come out creamy/soft not dry, the meat steams too and even leftover chicken breast gets moist, and the seasoning is soooo good!!! We smash our potatoes and pour the broth in the bottom of the dish over them. Best of all it only takes minutes to prepare and it reheats well for leftover leftover's 8) 8) 8)

Your cooking time may vary from mine, I have a smaller microwave
You could add onions and garlic if you'd like
The seasoning is available in most grocery stores now. Their Cajun spice and Special Herb Blend is really good too!!

Amma, this sounds wonderful! I, too, love that seasoning. It's a little bit of a challenge to find it, though.

Do you have Safeway grocery stores??? They are the one place I can always seem to find them :wink:

Yes, I love this recipe...I can quickly make it for just me, or enough for leftovers the next day too, or for a whole crowd :wink:

I'll check there (Safeway) I like King Soopers (Kroger), but I occasionally go to SW.

There's a Safeway about 30 miles from me. I go there for the sour dough bread from CA. Next time I'll look for the Cavender's.

Ducky, I'm so glad you mentioned the seasoning is hard to find...I've scoured our small town and there is none to be had so the next time I go to the city I'll see if I can find a store that specializes in Greek cuisine seasonings. I saw another ingredient on one of these posts for another seasoning that noone in town has ever heard of. I have the name of it on a piece of paper in the car so when I get to the city I'll look for that, also.
