Ranch Parmesan Chicken
Combine in bowl:
1/2 cup fresh Parmesan cheese - grated 1 tsp garlic powder Salt and pepper to taste 1 cup Panko bread crumbs 4 chicken breasts (skinless & boneless) Dip chicken in 1 cup bottled Ranch dressing then roll in Panko mixture. Place in greased oven dish & drizzle with 1/4 cup melted butter Bake 350 degrees for one hour. I did not cover. Chicken was large so I cut in serving size pieces. Recipe from a handout cookbook from the electric company. Can be prepared & baked later. |
Thanks, Tranum. I often dip or marinate my chicken breasts in Italian dressing and then roll in bread crumbs before baking. Will give ranch dressing a try!

And a recipe that can easily be adjusted down to serve one or two or increased to serve 6 or 8. Thanks, simplicity with flavor is a good thing in my kitchen.
PS. I use Italian dressing as a marinade often. Yummy. |
I often brush on ranch or ceasar dressing and roll in bread crumbs before baking. I also mix various spices ( or sometimes jerk seasoning or curry powder) into plain yoghurt and marinate the chicken before rolling in crumbs.
For keto, roll in crushed pork rinds. If using yoghurt, shake off the excess before rolling in the crumbs and bake no higher than 325 degrees. High heat will make the yoghurt break down. Okay, now I'm hungry. |
Just got around to checking this out. I've always used Hellman's mayo, any seasoning that complements the other meal items, and panko crumb topping. So versatile with your choice of seasonings. Also works very well for any fish.
