Rhubarb Squares:
9x13 pan
crust
1 1/2 cup flour
1/4 cup powdered sugar
3/4 cup butter

Mix together until crumbly and pat on the bottom of pan.
Bake 12 - 15 minutes @ 350 degrees.

filling
3 eggs
2 1/4 cups sugar
3/8 cup flour
1 tsp. baking powder
8 cups rhubarb diced

Mix together and spoon onto crust.
Bake 350 degrees for 50 - 60 min.
Let cool slightly before cutting. Serve warm if possible with ice cream or Cool Whip
Refrigerate leftovers.

Not sure but I think it may be what I call icing sugar.

Powered sugar is also called 10-X sugar. It's basically sugar that's been ground to the consistancy of talcum powder.

Powdered sugar is: Confectioners sugar also known as 10-X powdered sugar.

Have NEVER heard it called icing sugar. But I do have some icing recipes that call for confectioners sugar.

Sorry about the confusion about powdered sugar/ confectioner's sugar. I just called it what Mom called it. Must be a colloquialism. The recipe was hers. She'd make it every spring. I do not have rhubarb since she died. I miss her and the rhubarb squares. Enjoy them for me.

It's called icing sugar in Canada, Australia, New Zealand, in all of Europe and just about everywhere else you can think of that uses it.

Check out the Cooking Channel - they have quite a few chefs from other countries doing cooking shows, and they call it icing sugar.

It also has cornstarch in it to prevent clumping.

Our stores charge an arm and a leg for rhubarb. Last spring it would have cost me $12 for enough for 1 pie (4 cups)! I dearly love it and it's my son's favorite, but not at that price.

Although this recipe sounds delicious, I don't think I'll be making it, sorry to say.
