Rhubarb Cake
1/2 cup shortening(Can sub coconut oil)
1 and 1/2 cups sugar 1 egg 1 tsp vanilla 1 tsp salt 1 tsp baking soda 1 cup sour milk(buttermilk) 2 cups flour 3 cups chopped rhubarb(fresh or frozen) Cream sugar and shortening, add egg & vanilla. Combine dry ingredients. Alternate buttermilk and dry ingredients to creamed mixture. Add rhubarb. Spray 9x13 in. baking dish with Pam/Baker's Secret. Pour batter into baking dish. Sprinkle top with sugar and cinnamon. Bake 350 degrees, 30-40 min. EXCELLENT recipe. Enjoy! |
