My parents are out of town, so while they're gone, I've been checking on their house. They won't be back for about another month, and I remembered they have rhubarb plants. So I went and picked some last night! Don't want it to go to waste, right?!! :lol:
I found this recipe in an old church cookbook, and I loved it... eating it now... and thought I'd share.

Rhubarb Crumble

Filling:
3 c cut rhubarb
2 eggs, beaten
1 1/2 c sugar (although I used 1c and it was fine)


Grease 7x11 pan, put rhubarb in, pour eggs & sugar over


Crumble:
1 c flour
½ c brown sugar
1 t soda
5 T butter

Mix together, crumble over top



Bake at 350 for 45 min.

ENJOY!! It is sooo yummy, the eggs almost make a custard in the bottom.

Made some yesterday. A new family favorite. Next time I will add pecans. Worked great in a 9x9 pan.

Here's another recipe for Rhubarb Crumble.

RHUBARB PUDDING CRUMBLE

4 cups chopped Rhubarb
1/2-cup sugar
1 package strawberry jello
1 small package Jiffy yellow cake mix contents (do not make up a cake batter)
1 cup cold water

Layer ingredients into 9x12 baking dish in order of listing.
Bake 1 hours at 350-degrees F.
Cool. Top with scoop of ice cream or whipped cream.
