Rhubarb Sauce
 
I made my Dad's favourite rhubarb recipe. Rhubarb sauce can be made when the stalks get tougher. I harvested about 6 cups of rhubarb ( cut into 1 inch pieces) added 3 cups sugar and a little water and put the saucepan on the stove to cook. Once it looked stewed down, I added 3 Tbs. of minit tapioca for a nice smooth sauce. Served over vanilla ice cream for a fresh, delicious treat.

In my kitchen, 6 cups of rhubarb would get about one half cup of sugar. I have a recipe for a rhubarb crisp in which the rhubarb layer gets no sugar at all. There is some sugar in the crust and crumb top and it tastes great.

When Dad developed Type 2 Diabetes, I remember Mom made it using red sugar free jello.

I usually add a few cinnamon hearts candy for color and for flavor.

I think a friend of mine would love this recipe!

I used to eat my neighbors rhubarb...I'd rip it right from the ground and munch away. Boy she got mad about that! Made my mom purchase rhubarb from the grocery store every 4 weeks or so that summer, stating "Well your daughter ate all mine and it would normally reproduce again by now..."

Oh that sounds so good. Thank you for the recipe. I just happen to have some rhubarb in my back yard that I wasn't going to pick this year. You didn't mention cooking it at all after the tapioca was put in. I thought you had to cook it some but I have only used it in making actual tapioca pudding. I didn't know much about it. I always seem to have it in my cupboard because when I get the tapioca urge then I make it. The price of it is unbelievable anymore but a box does make a lot.

I simmered it a bit longer after the tapioca went in the give it a chance to plump. I then just left in in the saucepan until it cooled and then poured it into a covered dish in the fridge.
