I love rice! I love to mix it with different ingredients and make simple one dish meals. This is going to serve me well in College! These can be simple one dish meals for two to three people or a side dish for three to six people depending on how much a person is going to eat!

Rice and Kidney Beans

1 cup rice
2 - 2 1/2 cups water (if in microwave 2 1/2 cups, otherwise just 1)
1/4 can Kidney beans (more if desired)
1 tbsp butter
1 tbsp Adobo
1 tbsp Cajun Spice (opitional. But it is just enough to give flavor)
1 tbsp Paprika

Oven Top Directions:

In a sauce pan place Rice, Water and Butter and bring to a boil. Be sure to stir.

Boil for at least 1 minute.

Add Kidney Beans.

Then Cover for about 15 - 20 minutes. (time may vary based on you and how ever you make rice) Stir occasionally.

Once tender and no water remains add in seasoning and stir.

Enjoy!

Microwave:

Combine rice, water, butter and beans. Cook on Rice setting (if available on your Microwave) or for 20 -25 minutes depending on your microwave.

Once finished, add seasonings.

Enjoy

Adobo is Spanish for sauce or seasoning or marinade used in Latin American- and Southwest U.S.-style cooking. The noun form describes a marinade or seasoning mix. Adobo is also a style of cooking used in Filipino cuisine...

You can find it in with the spices. It's made by Goya. You can use it on many things and it's not spicy at all. We buy the red capped one.

You are welcome! I have other recipes for rice, but they are at home on index cards... we are a rice family... :D
