Peel your rutabaga and then cut it into julienne strips, cook them til almost tender. Remove from stove and drain. Cool in fridge. Make a dressing - 1/2C sugar 1/2C Miracle Whip 1/3C vinegar Blend together very well Chop up some onions and add to cooled rutabaga Mix in cooled dressing Refrigerate and serve. This recipe goes back to my grandmother from Sweden (they made their own "Miracle Whip" and it is served for sure on Thanksgiving, but start serving it when rutabagas come in. My husband liked it when I would cook it up, mash it, let it drain a bit and put on butter and salt and pepper. That is really good too. There's my rutabaga library. Enjoy! Edie |
Rutabagas are one of the best vegies , I fry out several slices of gacon cut in small pieces. I peel the rutabagas and cut into small chunks and add to crispy fried bacon pieces, cover with water and boil til soft and water is cooked down til rutabagas are just moist. Best eating anywhere!!
