Seeking recipe to use leftover creamed corn
 
Hello all,
We have a fairly large quantity of creamed corn left over from a family dinner - any ideas what I can use it in? We're not big fans of it as is, and apparently neither were the others.
(I was trying to expand some horizons but there isn't any expanding taking place, the creamed corn wasn't the only non-seller at the dinner)
Any and all ideas welcomed.

Corn fritters, corn soup.
That's all I can think of now.

I would freeze it in 1cup portions to add to soups. It would go well in cream of potato, cream of broccoli, cream of cauliflower etc.

I just made corn chowder for our dinner tonight as we had a late large lunch at a restaurant with family. I will try to remember to post tomorrow. ;-)

I do a casserole which doesn't particularly use leftover but here it is...

1can corn - undrained
1 can creamed corn
1 pkg of jiffy corn muffin mix
1 stick butter or margarine
2 eggs beaten
1/2 c sour cream

Mix all togher in 2 qt casserole. Bake 350 for 45 min.

I chop up the butter into large chunks and mix in after cooking for a bit. It also takes longer to cook -about 1 hr. Everyone raves about it and requests the recipe.

Enjoy.

I can understand, I am not a fan either.

Some cornbread recipes call for creamed corn.

But truth be told, I would toss it.

I love it in cornbread. Look on cooks.com for ideas. Freeze what you can't use right away (like Tartan said, 1 cup portions are good).

Scalloped Corn: 1 can creamed corn, 2 Tblsp. corn starch, 2 eggs, 1/2 tsp. salt, 1 Tblsp. sugar, 1 cup evaporated milk. Pour into greased oven dish. Bake 375 for 45 to 60 minutes. Can add 1 pkg. frozen chopped broccoli cooked and drained before baking. Also can add 2 Tblsp. melted butter, dash of pepper, minced onion.

Swedish Corn Pudding: Mix 1/2 cup flour with 1/2 cup melted butter. Add 1 can creamed corn, salt to taste and 3 beaten egg yolks. Place in greased oven dish. Add 1 cup milk. Just before it goes in oven, add 3 beaten egg whites. Bake 350 for 1 hour. This needs to sit about 10 or 15 minutes to "set up" before eating.

We love corn chowder with bacon, onion, celery, cubed potatoes, creamed corn, regular corn, evaporated milk and regular milk. I season with salt, pepper, dash of crushed pepper flakes and savory. Chop and fry bacon then remove and sauté veggies. Drain extra fat. Add milks and seasonings and simmer. You can thicken with a little flour slurry in the milk if you want. We don't like thick broth, so I don't.

I add cream corn to my Midwest Chowder which is basically a glorified potato soup. Also used regular corn in my cornmeal muffins but don't see why you can't use the creamed version. If nothing else, freeze it for another time. For myself I love all types of corn versions.

I use it in potato soup and broccoli cheese soup. Dh doesn't like creamed corn If all else fails just put it into a stew. Depending on how much you have save or pitch. If you have to think about it too much then pitch it.

We love that casserole recipe, made w Jiffy mix. Use up your creamed corn that way. My foodie friends look for this every year at my neighbor's Christmas party! Perfecto for the vegetarians!!

As promised....

CORN CHOWDER
5 slices bacon
1 medium onion, chopped
2 medium potatoes, peeled and diced (1 1/2 cups)
2/3 cup water
1 16 oz. can cream-style corn
2 C milk (for extra richness, use 1 C milk and 1 C half and half)
1 tsp. salt
Dash pepper
Butter

In large saucepan, cook bacon till crisp. Remove bacon; crumble and set aside. Reserve 3 Tbs. bacon drippings in saucepan; discard remainder. Add chopped onion to saucepan and cook till lightly browned. Add diced potato and water; cook over medium heat till potato is tender, 10 - 15 minutes. Add bacon, corn, milk, salt and pepper; cook till heated through. Pour into warmed bowls; top each serving with a pat of butter. Serve with crackers.
Makes 4 - 5 servings.

Corn chowder Corn fritters and Corn bread are my first thoughts. Google recipes using creamed corn and you will no doubt find something you would like

For the corn pudding, I should have said the beaten egg whites go on the top. This will be soft and runny when you take it out so believe me when I say allow time for it to set up.

That's the recipe I was going to suggest too! I call it "corn flop casserole" because the first time I made it I dropped it upside down on the oven door .... flop. I suggest making the casserole WITHOUT dropping it.

Thank you all for the ideas - not sure what I'll do.

BTW, DogHouseMom/Sue - I've made flip flop pizza - now that was a mess -and of course, it happened when we lived in a very remote area with no take out food - house full of sleeping -over company and I made pizza from scratch - yeast based dough and everything - we were so ready for it and I flipped it onto the over door and then the door closed - out came the spatula and we scraped it up and we ate it!

I make a quick bread to serve with bean soup. Heat oven to 400 degrees. Put one stick oleo or butter on cookie sheet with sides and put into oven to melt oleo. use 1 cup cream style corn. 2 cups biscuit mix. mix these together. turn out onto floured surface and knead three or four times and pat down to 1/2 inch thick. Cut dough into 1 inch by 3 inch pieces by cutting into 3 inch strips and then cut them across in 1 inch pieces. Get cookie sheet out of oven. Put dough strip onto the cookie sheet one at a time, dragging them through the melted oleo and flip them over leaving an inch between for expansion. Bake 12 to 15 minutes or until edges turn brown.

As others have suggested, I would freeze it in small portions and use it in future soups. I keep a small tupperware container in my freezer and add leftover veggies to it and when it's full, I make soup!

This is a favorite here...we also top the casserole with cheddar cheese toward end of baking time. Everyone like cheese. :)

NJ Quilter, why do you put the butter in later instead of all together before putting in the oven? Must be a reason that I can't fathom just now.

Here is a recipe for Corn Chowder which we think is delicious!

1can creamed corn
1-2 potatoes
chunks of ham

Combine the 3 ingredients with salt and pepper. Let cook until potatoes are done. Serve with corn bread. Enjoy!!

I really enjoy Spicy Corn Chowder but if you don't like creamed corn, I'm not sure you shouldn't just throw it out - or fix the soup for a local soup kitchen for the homeless. Here is the recipe -

Spicy Corn Chowder
4 servings

1/4 cup butter (1/2 stick)
1 medium onion, chopped
1 cup red bell peppers, chopped
1 teaspoon cumin
1/4 teaspoon cayenne pepper (or to taste)
1/4 cup all-purpose flour
1 cup canned chicken broth
1 cup whole milk (do not substitute low or non-fat)
1 (16 oz) can whole kernel corn, drained, liquid reserved (i usually just add a 2nd can of corn and skip the frozen)
1 (16 oz) can creamed corn
1-1/2 cups frozen corn ( depending on how thick you want the soup)
2 bunches cilantro, chopped (add cilantro to taste-I omit it)
sour cream, for garnish

1. Melt butter in heavy large saucepan over medium heat.
2. Add onion, cumin and cayenne and saute until onion is tender, about 4 - 6
minutes. [add red pepper if you prefer it non-crunchy]
3. Add flour and stir 1 minute. The stirring for one minute is important.
4. Gradually mix in broth, milk and reserved corn liquid. Bring mixture to boil,
whisking until smooth.
5. Mix in all the different corns and stir until corn is
just heated through.
6. Add cilantro.
7. Garnish with fresh cilantro and sour cream.

Good luck. If you do package it in 1 cup amounts to freeze, you can just donate them to your local soup kitchen.

My family loves creamed corn as long as it isn't that mess in the can. My new son in law said he didn't like it until he ate the homemade stuff. Corn fritters, just add some flour, garlic maybe some herbs and fry. Add to cornmeal or to soups. Its a great thickener if you emulsify it and put it in soup, chili, etc. After the holiday meal I take all of the leftovers and make a soup, I boil the bones to the turkey to get great stock. I add everything except the cranberry sauce.
