This is a family favorite for New Year's Day meal and it's easy to make and looks very fancy. To make it even easier, by pass stuffing the potatoes. Put filling in shallow dish and bake. It is delicious.

This recipe is from Paula Deen's Lady and Sons restaruant in Georgia.

Shrimp Stuffed Potatoes




6 large Baking Potatoes
Vegetable or Olive Oil
8 tbsp. Butter (1 stick)
2 c. Shredded Cheddar Cheese, divided
2 c. Shredded Monterey Jack cheese
2 c. Sour Cream
Salt & Pepper
1 lb. Shrimp, peeled & sauted
Paprika

Wash and dry potatoes. Gently prick them with a fork on all sides. Coat each potato with oil, place on a foil lined pan and bake until done.

Remove potatoes from the oven and slice each one in half. Gently scoop out the pulp and place in a bowl.
Using a mixer on high speed, mix the potatoes, butter, sour cream, salt & pepper. Fold in shrimp. 1-1/2 cups of cheddar cheese and all of the Monterey jack cheese.


* Don't try to get all the potato scooped out, you want to keep the skins intact.

Gently stuff the mixture back into the potato shells, making sure you don’t break them. Pile mixture as high as you can on top of the shells. Sprinkle with remaining cheddar cheese and a bit of paprika for color.

Bake at 350º for about 20-30 minutes or until browned on top

OK I have a question, I have never ciiked shrimp before :oops: You say sautered shrimp, what are the sautered with and how long are they sautered for ?

Well I made this last night for dinner & it was excellent....even though I didn't read the part about "sautéd" shrimp, I just used fresh hand peeled ones.
