Simply Sinful Cinnamon Muffins
 
Simply Sinful Cinnamon Muffins

Ingredients:

Topping:
1/3 cup brown sugar, packed
1/4 cup diced pecans
1/4 cup rolled oats
1/2 cup All-Purpose Flour
3 tablespoons soft butter

Filling:
3 tablespoons butter, melted
1/2 cup brown sugar
1 1/2 tablespoons ground cinnamon

Muffins:
1/2 cup (1 stick) butter, melted
3/4 cup milk
2 large eggs
1 3/4 cups All-Purpose Flour
1/2 cup rolled oats
2 tablespoons cornstarch
3/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup cinnamon chips
Directions:

Preheat your oven to 400°F. Line a 12-cup muffin pan and set aside.

For the topping: Mix the ingredients together until crumbly. Set aside.

For the filling: Mix all ingredients together and set aside.

For the batter: Whisk the melted butter, milk, and eggs together in a large bowl. In a separate bowl, whisk together the dry ingredients, including the cinnamon chips. Add the dry mixture to the wet mixture, stirring just until combined.

Divide half the batter evenly among the muffin cups. Place ~2 teaspoons of the filling onto each muffin, then top with the remaining batter. Sprinkle with topping and press it in lightly.

Bake for 20 to 25 minutes, or until golden brown. Remove them from the oven, and wait 5 minutes before transferring them from the pan to a rack to cool.

I copied it off. Sounds incredible. Good excuse to buy cinnamon chips. They are my nemisis....cant leave them alone.

Recipe sounds great but I have to ask - what are cinnamon chips? I've never heard of them.

They are made by Hershey's and are a combo of chocolate and cinnamon...yummy!!!

I found cinnamon chips at Walmart today. They were on a shelf of baking supplies in the middle of the isle close to the baking goods. I had tried at 3 different grocery stores and none of them had heard of them.

I have about 8 bags of cinnamon chips that I got on clearance last year after the holidays. This would be a great recipe to use them with. I don't believe however, that they have any chocolate in them . . . more like cinnamon drop the size of a chocolate chip. The base could possibly be white chocolate infused with cinnamon but no chocolate flavor at all.

You are correct! I was looking at the description of cinnamon chips from a different company! I am still hunting for more because these muffins are so good! Do you remember the store you found them in? I think my DH found them at a Grocery Outlet and their inventory changes all the time!

I believe it was WalMart but we also have a little market locally called Go Grocery that gets clearance items and I do pop in there occasionally. WalMart would be my first guess.

Thanks!!! Next time I go to WalMart, I will check it out - it is at least a 90 mile round trip for me, so I don't just pop over there! My kids say I live in B*E! When it comes to shopping, they are right :)

I searched for the cinnamon chips at three stores and then just two days ago while at Wally World, I found them in the seasonal display in the middle of the aisle. Haven't made these yet but will soon. Thanks for posting this recipe.

I am so glad you found them. I can only find cinnamon chips during the holiday season, so I stock up now for the rest of the year. I hope you like the recipe as much as we do!! :) You are so very welcome - I love sharing recipes and don't understand folks who won't share.

I couldn't find cinnamon chips so I melted some white chocolate, stirred in as much cinnamon as I could add without it tasting bitter and spread it out on waxed paper and let it harden. Then I chopped it into chunks and used it in the recipe. It was incredible!
