Smoked Paprika Turkey Meatballs

Yield: 4 servings.

Ingredients:

1 pound ground dark turkey meat
1/4 red onion, finely chopped
1/4 cup dry bread crumbs
1/2 teaspoon salt
6 sprigs parsley, minced
1 egg
1/2 teaspoon sweet or spicy smoked Spanish paprika
1 tablespoon olive oil
15-ounce can tomato sauce
1 cup dry red wine

Instructions:
1. Mix turkey, egg, onion, crumbs, salt, paprika and parsley; form into 2-inch balls.

2. Heat oil in skillet on medium-high heat; add meatballs. Cook, turning, until browned on all sides, 8 minutes. Add tomato sauce and wine to skillet; lower heat to simmer. Cook, turning meatballs in sauce occasionally and spooning liquid over meatballs, until meatballs are cooked, 10-15 minutes.

What would be a good substitute for the red wine? Unfortunately I'm allergic to wine. I know, tragic isn't it.

Tiffany, you poor thing! :( LOL! I usually include a substitute for those who not drink or like wine, but I "swiped" this recipe!

I would use beef broth in this dish and perhaps add a splash or two of vinegar, just to give it a little punch. Chicken broth would probably work too, but I think the beef would make the sauce richer.
