Spicy Georgia Peach Chicken
I found this online a few years ago. Jim and I have loved it many times.
Spicy Georgia Peach Chicken 4 Boneless, skinless chicken breast halves salt and pepper 2 tablespoons cooking oil 1 tablespoon butter ½ cut light brown sugar ½ cup spicy ranch dressing 2 tablespoons dijon mustard 1 can (15 oz) sliced peaches, drained and cut into chunks Season chicken breasts with the salt and pepper. In a large skillet, over medium heat add the oil and heat until shimmering. Add the chicken and cook for 5 to 7 minutes on each side or until golden brown, and juices run clear. Remove the chicken to a plate. Reduce the heat and add the butter, and melt it together with the brown sugar, stirring until smooth. Add both the dressing and mustard, stirring until bubbly. Return the chicken to the pan, and add the peaches and cook until heated through. Serve over rice. |

Sounds like a winner, though I'd use less sugar.
