Stuffed burrito
 
Last night I had some leftovers so I decided to play "Chopped". Using already sauteed onions and peppers, I added to them
some sliced yellow squash,
sliced mushrooms,
couple spoonsful of leftover taco meat, and a
half cup of canned black beans from the refrig and sauteed them altogether.
I heated a flour tortilla in the microwave about 25 seconds,
spread it with sour cream,
topped that with grated "Mexican cheese" (Kroger),
poured on a bit of salsa,
and piled on the filling.
Rolled and turned over the tortilla, topped with a bit more salsa and grated cheese, and baked it for about 18 minutes at 325.

Sometimes when I make one of these I top the baked burrito with chopped lettuce and tomato and call it "Deluxe"!

Sounds delicious. Meals like that are my favorites. I see using leftovers as a challenge.

Great way to use leftovers. I keep tortilla on hand for just about everything. I also turn them into chips for chili or soups.

I've done similar using leftover roast. Makes like a fajita.

We love burritos and have the breakfast ones fairly often.

4 oz. bulk sausage browned and drained
2 soft scrambled eggs
shredded cheese of your choice
salsa

Mix, heat, and serve rolled up in heated flour tortillas. Makes 4 servings.

Be sure to stick around, my dear, that may not be true forever. Older DD wants me to live with her at some point. I'm waiting til my grandson has at least gone off to college; he's just 16 right now. I love him, but feel he doesn't need Grammie at home at this point in his life. She lives in Agoura/Oak Park north of LA.

Wow, thanks, Jo! Did I ever post my sausage/mushroom quiche? That's pretty good, too. More cheesy than most quiche, tastes almost pizza-ish to me!

I've done these burritos with pork roast or chopped up chops, beef, chicken, veggies, or shrimp. Have not tried lamb -- since i rarely have any of that leftover as I LOVE it so much!! I swear, even mac and cheese might be yummy in these! Try spinach and mushroom with lots of a white cheese. :)

You silly girl, there are much better burritos in Texas than I could ever make here!! It's a real challenge to even get Hatch green chilies, for example. I LONG for real TEX-MEX and would just give my right arm for some sour cream chicken enchiladas that I didn't have to make with 95 recipe ingredients!!

We've had a "cold" (low 50s) front move in this evehing and i wish I had a big ol' bowl of this right now!! Wonder if the tiny bit of frozen chicken I have would be enough???.......
