Same as my recipe except instead of the crackers I use a package of stove top stuffing mix mixed in with the meat, and more milk (just enough to make the dry stuffing not so dry) Love the flavor of the brown sugar and ketchup cooked into the meat.

I like to add more veggies wherever I can so when I make meatloaf I lightly sautee diced onion, garlic, celery and peppers until they are just softened but still a little crunchy. I then add a can of fire roasted canned tomatoes. Once it's cool I add this mixture to 2 pounds of ground meat-beef, beef and pork whatever you like along with 3 eggs, whole wheat bread crumbs and a generous shake of Penzey's southwestern seasoning and ground pepper. It's a little sloppy but moldable(is that a word?) and I cook it at 350 for an hour and 15 minutes. The smell when it's cooking is incredible-drives the hounds crazy. There are only 2 of us-hounds can't share because of the onions so I freeze half and get 2 meals out of the rest. Seriously yum.
