Sweet cornbread recipe
 
My sil has requested sweet corn bread for Christmas to go with the brisket. I make cornbread but it isn't sweet - any good recipes?

The website allrecipes.com has a Golden Sweet Cornbread receipe. I have just added sugar to a regular mix,
How fast West. Used to live in Sundown Tax.

We just use Marie Calendar mix and throw in a little sugar! It's mighty tasty!

1 cup yellow corn meal
1 cup self rising flour
1 cup milk
1 egg
1/4 cup sugar
1/4 cup cooking oil
Mix all together. Add ingredients to a cast iron skillet. Bake 425 for 15 to 20 minutes or until slightly brown on top. I've been using this recipe for over 40 years and my mom before me. It's not real sweet but more so than the boxes of cornbread.

I just use Jiffy cornbread mix. I tried recipe after recipe for years, and could never find one that was as good as Jiffy. My daughters just refer to it as "the family secret recipe."

I have used the Jiffy Mixes as well, but don't think they are as sweet as they used to be. Sometime ago we felt they had made a change perhaps to cut down on expenses, so now I add extra sugar to the mix and it seems to help, but seems to make the cornbread more crumbly though.

I have used Jiffy Cornbread Mix with a Jiffy yellow cake mix. It makes a really nice sweet bread.

I use either the Jiffy Mix or the GFS mix, follow the directions, but replace 1/2 of the liquid with either honey or maple syrup and have had compliments on the flavor...

Honey Cornbread:
1 c. sifted flour : 3/4 c. cornmeal: 3 tsp baking powder:1/2 tsp salt: 1 egg, beaten:1/4 c. honey: 2tblsp butter or margarine, melted: 1 c. milk
Sift together cornmeal, flour, baking powder and salt. Combine egg, honey, butter and milk into another bowl. Add to dry ingredients, stirring just enough to moisten. Pour batter into greased 8' pan. Bake 400 oven for 30 minutes or til test clean. Cool in pan on rack. Serve warm with honey and butter. Source: " Farm Journal's Complete Home Baking book"
Alternatively:
1 c. packaged biscuit mix: 1 cup cornmeal: 1 tblsp baking powder: 2 eggs: 1 c. milk: 1/3 c. honey: 1/4 c butter or margarine melted. Mix dry ingredients. In small bowl, beat eggs til blended; then stir in milk, honey and butter ( the honey will come out of the measuring cup best if you put the melted butter in there first). Pour egg mixture into dry mixture and stir just until evenly moistened. Pour batter into 8" greased baking pan. bake 400 degree oven 30 minutes or until clean test. Let cool slightly, then cut into squares and serve warm.
Honey Butter: in small bowl beat together 1/2 c. butter and 1/4 c honey til creamy and well blended. mound into small crock and serve.

As you can see the recipes are basically the same. The Sunset recipe states it yields a fine crumb, non crumbly cornbread, which ought to be a bit sweeter and more cake like than the Farm Journals since it has more egg and more honey. Enjoy.

This is the recipe I always use.
1/4 cup melted butter
3/4 cup sugar
1 cup flour
2 eggs
4 tsp baking powder
1 cup corn meal
1 cup milk.

Mix butter,sugar,eggs,corn meal and let set about 5 min.
Add remaining ingredients,mix and pour into a 8x8 greased pan and bake 350° for 45 min.
Enjoy!

Sweet & Spicy Cornbread
2-Pkgs. Betty Crocker Cornbread & Muffin Mix
2-Eggs
1/4 cup Melted Butter
1-Small Can of Choped Chives
1-Can of Creme Style Corn 14oz.Can

Bake In A Sprayed 9 by 9 inch Pan Bake at 400*for 35 mins.
I'm sure if your Sister likes Sweet Cornbread she will for sure love this one i have been making this one for eons it's a winner here at our house ...Merry Christmas to you and yours

I've used this one for years - very moist & easy.

preheat oven to 425' - put a TBSP or 2 of canola oil in an iron skillet and place in the oven while you're stirring up the mix. Combine 1 cup self rising cornmeal, 2 eggs. 1/2 cup canola oil and 8 oz can of cream style corn. Mix well. Fold in 1 cup lowfat sour cream and blend. Pour into the hot skillet and bake for 30 minutes. If you use a sectioned cornstick pan, bake for 15-17 minutes.

I have used yellow cake mix for the flour in a recipe and it turns out sweet and light.

Add 2 tablespoons of sugar to any cornbread recipe or packaged mix. It isn't cakey sweet. We call it Yankee cornbread.

My paternal grandparents were both French Canadians and cornbread was a staple in their diet. My grandmother made the best cornbread you could want but they called it 'Johnny Cake' . Now I'll have to make some in the morning due to this thread, Love, love, love, meme's cornbread. Thanks for bringing back the memories.

I use jiffy plus a yellow cake mix. Mix together with required ingreedients then add a can of sweet corn. Tbe best ever.

I use a Jiffy mix and add a few spoons of sugar. I like my cornbread sweet, too.
