Sweet Potato Bread Recipe
 
Does anyone have a recipe for Sweet Potato Quick Bread made either from a cake mix or a quick bread mix.

I've just used my favorite banana bread recipe and substituted sweet potatoes from a can. Turned out fine!

I'm gonna watch this thread. We're trying to include more sweet potatoes in our diet. Of course, breads/cakes don't fit very well into diets, do they?;)

I use my pumpkin bread recipe and use sweet potatos from the can in it and it works great!

I use my pumpkin bread recipe and substitute sweet potato for the pumpkin.

Sure they do if they contain a veggie. Didn't you know the viggie cancels out the other calories. ;)

Using Sweet Potato instead of Pumpkin

I thought everyone did, and there are several other veggies that taste like pumpkins in pies, and probably cakes.
My little WV Grandma used to use anything she had on hand for "Punkin Pies". Such as squash, sweet taters, carrots, anything that would fill in the pie. With the milk and sugar and eggs and all the spices, if she called it a Punkin Pie then
we ate it and was grateful for it. Especially good in mid winter with the snow falling straight down and all the farm work
done for the day, with the kitchen windows steamed up from heat of the old wood stove....those were the days, and my
poor overworked Grandma was thrilled to live her old age in a modern house!!

Well, I never heard of sweet potato bread, but sure do want to try it now! I would think subsituting cooked sweet potato for something else would work. Now wondering if you can make sweet potato rolls hmmmmmm.
