Is there a secret to really great sweet potato fries?

I cut the fries and roll them in cake flour and deep fry as you would regular fries. I got the recipie from the Old Ponderosa Resturant.

I've been trying to find the secret too. I would like to make them in the oven, rather than deep frying, but they always come out soggy. They're never crispy as all the recipes promise. I've tried various processes involving adding cornstarch, supposedly for crispiness, but they still come out soggy. What am I doing wrong?

We love sweets potato fries...better than regular fries. I have no secret, but this is my method. I precook in microwave just about half the time required. Cool, peel, and cut into fries. It's bad, but I actually deep fry them, haha. So I let them fry for a bit, raise the basket and let rest a few minutes while the oil heats up again...then plunge and finish until edges are crisp. I've heard you can soak in sugar water for crispness, but this is quick and satisfies us.

I buy a bag of frozen spf, preheat the oven. While it's heating I rinse off the fries so all the ice is melted and dry off the fries with a clean towel. They are much crispier that if I stick them in the oven with the ice crystals on them. I think I preheat the oven to 375 convection oven, so that would be 400 for regular.

Sweet potatoes fries are a staple around here. I don't actually "fry" them though. I do them in the oven, so much healthier than frying. I cut the sweet potato in strips. Put a tablespoon (or so) of olive oil in a bowl. Add a dash of cayenne and toss the fries in the oil mixture. Bake in a 450 deg oven for 20 minutes and they're done.

Me too cashs_mom. I love the sweet potatoe fries. I am a diabetic and this is the way my DR. told me to fix them.
