sweet potato pie
 
ok the holidays are coming up, would love a good old fashioned seweet potato pie recipe, and I know there are a bunch floating around here, so sure would appreciate the sharing and if anyone wants some recipes, I also got a bunch, A-Z

also do you think combining acorn squash with apples would make an acceptable pie? Got some acorn squash cooked but not enough for a pie so I thought I'd try adding enough apples to make enough to fill a pie...
Probably use apple pie spices?? Thanks for any more-informed-than-I input.

Met a girl from Haiti at University. She made sweet potato casserole. Best I've ever eaten. She added bananas and orange juice to hers.

I bet you could use the squash and apples but would need a little thickener, (flour /arrow root) as the apples have a lot
of juice this time of year.

My grandmother made sweet potato pie with the same recipe that she used for fresh pumkin pie. It worked fine. Her recipe called for x cups of boiled, strained,and riced pumkin or sweet potato. After that everything was the same.

Got this recipe from a dear friend.

Sweet Potato Pie
- Sandra J. Main

Crust:
1 1/2 c flour........... 1/2 t. Baking Powder
1/2 t. Sugar............1/2 c. shortening (rounded)
1/2 t. Salt ..............1/2 c. cold water (less 2 T.)

Filling:
4 T. butter .............1 t. cinnamon
1/2 c. Sugar ...........2 c. mashed sweet potatoes (1 can)
3 eggs, separated ...1 c. milk

To make the crust, cut the fat into combined sifted dry ing. Gradually add water. Roll out on floured board. This is enough for 2 single-crust pies.

Filling:
Cream butter and sugar. Add egg yolks, spices, potatoes and milk. Beat.
Fold in beaten egg whites. Beat again with electric mixer til there aren't any lumps.
Pour into shell.
Bake at 425 degrees for 10 minutes.
Lower heat to 350 and continue baking for about 40 minutes more, til a toothpick insrted in center comes out clean.

Sweet Potato Pie Recipe
 
Mary,

I got this recipe from a nice lady in her 70's in 1983. Been a favorite for years. You will. Love it for it calls for no milk. Let me know after you make and eat a piece.

Sweet Potato Pie

2 1/2 cups fresh mashed cooked sweet potatoes
3/4 stick butter
3/4 cup white sugar
2 eggs
1 - tablespoon self rising flour
1 - teaspoon cinnamon
1 - 9" deep dish frozen pie shell

First remove the pie shell from the freezer to thaw as you mix the ingredients. Boil sweet potatoes until tender. Peel and smash. Add butter, sugar cinnamon, and flour. Add the eggs. Pour all into the 9" pie shell. Cook at 350 degrees for 1 hour and 10 minutes. Let sit for an hour before slicing.

Optional: A scoop of cool whip or ice cream put on top is delicious with this.

I use the recipe on the Libby's Canned Pumpkin, substituting the amount of pumpkin with the sweet potato. Never had one fail yet comes out perfect every time.
