Sweet Potato Pone?
 

Does anyone on here have a recipe for sweet potato pone? This is not a pie. There isn't a crust but when you cut it it holds together like cake. Not crumbly but firmer than sweet potato pie.

Try online. There are lots of recipes

brought a memory bubbling to the top of my mind.
My dad's mom made pone quite often when we were camping.

She would make hot cereal, probably Cream of Wheat
and the next morning she would slice the cold leftovers and fry them
Sometimes they were the evening starch, and sometimes we'd put syrup or jam on them for dessert.

boil and mash sweet potatoes, cool and then fry?
I'd love to hear how this comes out.

My mother - and my mother-in-law would both make fried corn meal mush.

They would cook cornmeal - and then put it in greased bread pan and refrigerate it.

The next morning, they would take it out of the pan and slice it. I think my Mom sliced it about 1/2 inch thick and then it was fried in bacon grease, if available. If no bacon grease, then in almost any grease.

I don't know if she/they dipped the corn meal slices in flour before frying them or not. I did not like that when I was growing up - and I was not paying attention. :rolleyes:

I dip mine in flour. Also when cooking the cornmeal I use the water from a boiled ham. There will be little bits of ham in the water and the flavor is wonderful. Have not heard of sweet potato pone, only corn pone.

Yep, my Mom too...Great memory...one of those breakfast that "stuck with you!"

oh! forgot all about corn pone. that was a deliberate dish at home, not leftovers.
When we were skint before payday mom would make this, dad would put his in milk. Euu :)
for his lunch box he got rolled up cold pancakes late in the payday cycle.

nobody starved, nobody died :) Mom wouold put burnt toast in the top of the bread box to save for dressing.

You all had me curious as to what this might be, and sure enough, there were a mere 590,000 hits.
Looking at the first page, all were pretty much the same, with unique spins, as we oft see with recipes.
Liberian version, Jamaican, Southern ... and so on. Even one topped with marshmallows.

Looks interesting .... a first course pumpkin pie sort of a thing?
