This is wonderful! I like to call it a "vegetable" and serve as a side dish, but is better than pie!

SWEET POTATO SOUFFLE
1 large can (30 oz) Sweet Potatoes or Yams
1 tsp vanilla
1/2 cup butter
1 tsp cinnamon
1 cup sugar
3 eggs
1/2 cup evaporated milk
Heat potatoes in syrup that it's canned in. Beat well. Add remainder of ingredients. Beat until fluffy with mixer. pour into buttered cassarole dish. Bake 20 minutes at 350 degrees.
COMBINE:
1 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped walnuts
Blend with fork. Sprinkle on top of sweet potatoes. Bake additional 10 minutes.

What would your suggestion be for fresh sweet potatoes?

I'd assume just cook, peel, and whip. About 1 3/4 cups. The canned ones have a syrup stuff, but this dish is sweet enough without. Yum, fresh veggies are a plus! Sara
