sweet potato ?
My secret for tasty stew is a sweet potato. When I can find small ones. Seems these days all I can find are really big ones. Can I cut one in half for later use.

I always cut mine up, even for baking. There should be no problem just wrapping the extra and putting in the refrigerator. And thanks for the stew tip!

Sure you can cut sweet potato to use later. I find the cut end will discolour a bit but I just cut and discard a sliver off the end.

I know what you mean about big sweet potatoes. My DH does not like them and it is hard to find a little one just for me. So, I always bake me a big one - cut in half and eat one half and put the other in the refrigerator in a zipper bag and reheat it up in the microwave for another meal and it tastes just as good as if I just cooked it. HTH

My mom cooks them peels them, then freezes them in smaller portions. She microwaves them covered half way in water and a lid to cook them. Be sure to prick them a few times. Microwave 8 min then increments of 5 until done. Very moist and tasty.

Great idea.......I never thought of putting a sweet potato in stew. I will have to try that next time I make it.

Keep in mind the sweet potato cooks faster. I add it near the end.

You can easily cut up the sweet potato and use the remaining half after 2 to 3 days provided you have refrigerated it properly so that it does not become black. You can also make a sweet pie using them.

I bake up a whole one, put on some butter and brown sugar and with a nice tossed salad that is my whole dinner and that is more than enough. I love sweet potatoes. Edie

The left over sweet potato will keep better if it is cooked first. It takes no more energy to cook the whole one.
I cook three big ones at a time, eat one meal, put one meal in the refrigerator and put the rest into the freezer in one meal portions. |
I almost like that idea better than mine.......cook up a bunch and they will be ready for lunch!!!!!! OMG did I do that????

I make roasted white and sweet potatoes I peel and cut in half and cut long chucks steam them till they are soft though them in a roasting pan spray a little oil and salt and sprinkle rosemary and roast for an our never have left overs. But they can be warmed up easy

I love sweet potato too. I just cut off what I need then put the rest in the crisper. It may get a little discoloration on the cut end but I just cut a sliver off before I use it next. I can keep it for a week or so and it's still good.. Just got onto Parsnip chips. YUM. I will microwave Sweet Potato, white potato (small) carrot, parsnip and pumpkin all cut into chips until almost cooked then place under the grill under crispy. Yum, yum, yum.

We love baked sweet potatoes but like you, hard to find small ones. So I just buy a large one, bake it, then slice it in half the long way, and we each have a nice sized potato to eat. Now I'm hungry and it's too late to eat!

I'm on a sweet potato kick this week. I nuke mine, a little butter, lots of cinnamon and equal. yum yum !

I Love BIG sweet potatoes...with lots of butter! But I really don't eat all of it at one meal. I want to though!
