Sweet Potatoes
 
Does anyone have a simple Sweet Potatoes casserole to take to a Church social? it will sit 2 hrs before church, so im guessing Marshmallows wont work. Thanks

I like my sweet potatoes by themselves. I give the skins a light coat of olive, put them in a casserole dish with a bit of water and roast them in the oven until tender. It takes quite a while so sometimes I cut them into 1 inch slices before going in the casserole dish if I I don't have a couple of hours.

Our Thanksgiving Favorite

Sweet Potato Soufflé

3 C mashed sweet potatoes (3 large potatoes)
1/2 to 3/4 C sugar
1/4 C melted butter
2 eggs
1 t vanilla

Mix together and pour into buttered casserole dish (I use 9x9)

Topping
1 C brown sugar
1/3 C flour
1 C chopped pecans
1/4 C melted butter

Bake 350 for 30 minutes

This is how I make them and even those who hate the sweet potatoes with marshmallows love them!! I have to admit, I really hate the canned sweet potatoes with marshmallows on top!! No more canned sweet potatoes!!!!

Orange-Glaze sweet potatoes
 
ORANGE-GLAZE SWEET POTATOES (12 servings)

6 sweet potatoes, boiled until tender or canned
1/2 cup brown sugar
1 Tbsp cornstarch
1 cup orange juice
1/2 cup raisins
1/2 cup chopped walnuts or pecans
2 tsp grated orange rind
Dash of salt
1/4 cup butter, cut into bits

Remove skins from sweet potatoes and cut in half. Place cut side down in shallow baking dish.
In medium saucepan stir together brown sugar and cornstarch.
Gradually stir in OJ until smooth.
Stir in Raisins, nuts, orange rind, and salt.
Bring to boil over med. heat, stirring constantly.
Allow to boil 1 minute.
Pour over sweet potatoes. Dot with butter.

Bake 350 degrees for 20-25 min or until bubbly.

This is gluten free and can be made dairy free also!

I have tried to like sweet potatoes, but after 55 years, guess its just not going to happen. Yay more for the people that like them! :thumbup:

I make this one every Thanksgiving and Christmas. Boil and mash three large sweet potatoes with 3 tbs. butter, 1/3 cup carnation evaporated milk, 1/3 cup brown sugar and 1/4 cup white sugar, 1tsp. vanilla and 1 tsp cinnamon. Mix well and spread in a nine inch baking dish. Top with crunch made with one cup flour, 1/2 cup brown sugar, 3/4 cup butter and 1 cup ground pecans cut up fine. Bake for 15 minutes at 350.

On the Lipton onion soup mix package is a recipe for roasted onion potatoes ( white potatoes) but I mix white and sweet potatoes together and they are great and easy. BTW it calls for 1/3 cup oil and I use way less, just enough to coat potatoes.

I peel and slice sweet potatoes and layer them in a deep-type casserole dish. I alternate lightly drizzling melted butter and lightly drizzling pancake syrup on the layers, along with sparingly salting every couple of layers. Cinnamon and chopped nuts can also be used on every few layers. Bake at 350. To speed up the baking process, I microwave about 10 minutes before placing in the oven.

I love sweet potatoes -- just baked, no butter necessary. I also really love them cold, fresh out of the fridge as a snack. However, I so enjoy trying new recipes, that I have copied those listed to try.

DH and I rarely have candied (with marshmallow) sweet potatoes. We eat them often, about once a month. Sometimes roast with regular potatoes and shallots. A good baked one is always nearby with steak or pork chop dinner. That souffle' sounds like a winner for you.

If it has to sit, why not use a crock pot. I'm sure there are recipes for the crock pot. I only make baked ones myself because no one else eats them.

Just make sure there are enough electric outlets available, then she should be good to go.

I've taken this to a covered-dish dinner, it didn't last very long, and people asked for the recipe:

Roasted Sweet Potatoes

with Shallots and Crispy Kale Ribbons

1-1/2 pounds Sweet Potatoes
3 medium Shallots
1/2 teaspoon Dried Oregano
Salt and freshly ground Black Pepper
Olive Oil
6 large Kale leaves, washed and dried
Variation:
1/3 cup toasted Pecan pieces
1/3 cup sweetened Dried Cranberries

Preheat the oven to 425 degrees. Peel the sweet potatoes and cut them into 1/2-inch pieces… transfer to a large bowl. Cut the shallots into thin slices and add to the bowl along with the oregano. Season with salt and pepper, drizzle about one tablespoon of olive oil over the sweet potato mixture and toss to coat.

Spread the mixture in a single layer on an oiled baking sheet with a rim. Bake for 30 minutes or until the potatoes are tender and lightly browned, turning once about halfway through.

Roll the kale leaves into a tight roll and cut crosswise into thin ribbons. Transfer to a bowl, drizzle with a little olive oil, and season with salt and pepper. Spread the kale on an oiled baking sheet and place in the oven when the sweet potatoes are about halfway done roasting until the kale is crisp and lightly browned, about 15 minutes.

To serve, transfer the sweet potatoes to a bowl and sprinkle with a few grinds of black pepper and top with the kale. (Serves 4 to 6)

This is the sweet potato recipe that I make every Thanksgiving. I've served it hot and cold. I actually like it better cold.

[h=3]Scalloped Sweet Potatoes and Apples[/h]
4 cups sliced peeled and cooked Sweet Potatoes
4 tart Apples, peeled and sliced
1 cup firmly packed Brown Sugar (reduce or eliminate when using topping)
½ cup Butter
1 teaspoon Salt

Put alternate layers of potatoes and apples in shallow baking dish. Sprinkle each layer with brown sugar. Dot with butter and sprinkle with salt.

[h=4]Topping-optional[/h]
¾ cup packed brown sugar
1 cup chopped pecans
1/3 cup melted butter
1/3 cup flour

In mixing bowl combine topping ingredients and mix well. Sprinkle over top of casserole.

Cover and bake in a 350 degree oven for 45 minutes. Uncover and bake for about ten minutes longer.

Serves 6 to 8

No sugar needed! My go-to sweet potato recipe, besides just baked whole ones, uses just fresh sweet potatoes, apples, butter and vinegar. Ratio: one medium sweet potato, one apple (I like Golden Delicious), 1 tablespoon each butter and vinegar. Peel and thickly slice sweet potatoes, core and slice apples; alternate in rows in baking dish. Drizzle with vinegar, then melted butter. Bake at 350°F, or whatever temp you're using for other dishes, until tender when pierced, about half an hour. No sugar is used, but they end up tasting slightly sweet, and scrumptious. I usually make at least 4 times the combo above, in 9x13 pan, so I have planned-overs.

NEW ORLEANS STYLE YAMS
6 large sweet potatoes
1/3 c orange liqueur
1/3 c bourbon
6 T butter
½ c sugar
1 t cinnamon
1/4 t nutmeg
1/4 t ground ginger
1/8 t ground cloves
1/8 t white pepper

Roast or boil the sweet potatoes until tender, then allow to cool
thoroughly. Peel and cut up coarsely in roughly ½” slices and arrange
in a large casserole dish.

In a small saucepan, melt butter over medium-low heat. Add
remaining ingredients and pour over the sweet potatoes. Cover and
bake at 375º for 45 minutes.

Marshmellows are fine, they are just sugar and gelatin. I roast mine (I don't like the sweetened ones in the can) until done, peel them, cut them up. I use maple syrup, (can use sugar free) cinnamon, brown sugar (Slenda has one too) and butter, I put pineapples on top and then cover with mini marshmellows and bake until brown. Its my family's favorite and so easy to make. You can bake the potatoes ahead of time, you can even make them in the microwave. I don't boil them because they absorb water. You can also add nuts if no ones alergic to them

For the non-drinking church goers, don't tell them the "secret ingredients" and if they don't drink, they won't recognize the flavors. If they do recognize them, they're not likely to tell, are they? ; O Myself? I plan to try this recipe!

My mother use to make fried sweet potatoes with sugar to die for. No one else in the family could make them the way she did. I have tried, but they are never like the ones she did. If we had any with the meal then forget dessert, because none needed or wanted. :)

If you use can sweet potatoes put them through a ricer and they will be fine.
