Sweet potatoes
 
Yesterday we harvested sweet potatoes. They're very inconsistent in size. Think I'll cut up the largest ones into "French Fry" size. Then freeze them. Also cut up the ones that had damage.

Last night we had sweet potato casserole. Microwaved the sweet potato and sliced onion for 10 minutes first. Then added sliced ham and ground mustard. Baked for 40 minutes. Very tasty.

I grow them in 50 gal pots so they can be dumped out rather than dug out. Then use the soil to plant new plants in the garden and refill the pots with new potting soil. Have to be extra careful to remove any roots or they'll sprout.

Nothing like an easy-peasy-throw-in-the-oven-and-forget meal!!

Love the idea of growing them in a bucket. It beats digging thru the sand to find them. I have also frozen mashed cooked sweet potatoes.

I like sweet potato fries. That is my favorite snack. The air fryer gets them crispy on the outside and soft on the inside. Sweet potato pie is a favorite too. For baked sweet potato I add cinnamon and butter.

Haven't gotten to processing those potatoes today. Had 2 young girls for quilting mentoring most of day. Then yesterday caught up to me and slept.

Time to cut up and freeze sweet potatoes. They're so yummy.

Cinnamon always suggests sweet to me. Can't have sugar but I can have the reminder. And a little apple juice or orange juice sounds really good.

Sweet potato fries are tossed with cinnamon and olive oil before baking at my house.
One of my favorite pies is Sweet Potato Pecan Pie.
Never thought to freeze them. They were only 50 cents per pound at Thanksgiving!

I LOVE sweet potatoes almost anyway they can be fixed except when marshmallows are added. Pies, cakes, plain baked I love them all.

Last summer I tried growing sweet potatoes in canvas bags with the door at the bottom so you can pull out the potatoes when they're ready. Problem is I didn't bother pulling them out and dug them all out in October when they were basically popping up out of the ground. Think if I had pulled them out in September when I started to see the soil start to erupt on top, I'd had have a better crop. I read to let them dry out for a couple weeks before using them so the sugar could convert to whatever. I was so excited about my 1st crop of sweet potatoes, I handed them out to my neighbors who gladly took them. They ate them shortly thereafter and said they tasted just fine so I guess I didn't need to wait a couple weeks.

I did peel them, them baked them with some olive oil and seasonings. them bagged them up for the freezer. A couple small bags for individual meals and then a larger bag to use however I chose. The larger bag eventually went into my squash soup as I was searching thru the freezer for veggies that needed to be used up.

Next year I'll pull them out sooner and may decide to plant a couple more canvas bags worth of them as I love sweet potatoes. I do them up like a loaded baked potato with all the trimmings on top. YUMMMMMMMMM!!!!

I didn't know you can just cut up sweet potatoes and put them in the freezer! How interesting! I live in a condo but have a porch. Will try raising a sweet potato this summer. Do I just cut up one from the grocery store and plant it?
