I received this soup recipe from one of the ladies in my SS class. She is a wonderful cook! I like a more spicy version and use the hot taco seasoning.

Taco Soup
1 -1 1/2# hamburger
1/2 cup chopped onion
1 - 28 oz. can diced tomatoes, undrained
1- 15 oz. can kidney beans, undrained
1- 15 oz. can kernel corn, undrained
1 - 8 oz. tomato sauce
1 -2 cups of water
1 envelop Taco seasoning
salt and pepper to taste
grated cheddar cheese

Brown hamburger and onion in deep skillet. Stir in remaining ingredients except cheese. Simmer 15. mins. Garnish with shredded cheese and serve with tortilla chips.

This is a great to-go soup. I have been making it for several years and it is served often at our "ladies" meetings. Freezes great and left-0vers are just as good. Easy and delicious.

It is a family favorite here. And hard to mess it up.
I add a can of tomato soup (undiluted)to sweeten the tomato base.
I throw in Black beans sometimes too to make it different.
My daughter likes extra corn.
And we do fresh oninions on top as the kids don't eat onions.
Sour Cream as a garnish is nice too.
YUM!

Sounds very similar to mine, but I use Pinto beans and black beans, drained and rinsed. Sooooo good!

Thank you for the recipe. Late DH liked this really well, but I had no written recipe and DH is no longer here to fix it. I remember he would get a regular package of dry Ranch dressing and he used hominy in place of the corn. yum yum

Taco Soup WINNER

one of my go to soups! Since I make it so much, I have started 'playing' I have substituted ground turkey, left over turkey (Thanksgiving is coming soon), also have used chicken breast.

I also add the taco seasoning before the meat it completely browned, the heat helps 'pop' the spices.

Also add a can of green chili's for a little of heat. Sometimes I add a small can of olives.

DH loves it with homemade cornbread. mmmmm

Top with onions, cheese, sour cream and corn chips.

We love making Taco Soup. I also add in the package of Ranch. Love it with chips, cornbread and cheese. ;) Great meal on a cold day. Or any day for that matter. I agree, leftovers are just as good if not better. I also add big pieces of onion for flavor (kids don't like them but I do-so I make sure not to put any in their bowl). ;)

I have had this recipe for years. My husband thinks there is nothing better on a cold night for supper.
