This is a recipe my friend shared with me and it is so goo and so easy, I thought I would share it with you. I'm making it for dinner as I type. Yum Yum!!!

TACO SOUP


1/2 to 1 lb ground beef (I usually use ground elk)
1/2 cup chopped onion
1 1/2 cup water
16 oz can stewed tomatoes
1 can kidney beans, undrained
8 oz can tomato sauce
1/2 to 1 cup frozen corn
1 pkg taco seasoning

Brown and drain the ground beef and onion. Add the remaining ingredients and simmer, covered, for 15 minutes.

We usually top it off in our bowls with sour cream, grated cheese, crushed tortilla chips (or in my friends case, her husband like his with corn bread) and green onion. She even puts olives in her soup. (I don't like olives so they got ixnayed real fast from my recipe)

Now doesn't that sound easy? I usually double everything and make a big pot of it. It doesn't last long around here. Enjoy!!! :D :D :D :D :D

This is a favorite at my house! My recipe calls for a packet of ranch dressing mix also.

This is similar to the Weight Watcher Taco Soup except we don't get to add the cheese, sour cream, crushed chips, cornbread!!!! LOL!!!

We use cubed chicken breast instead of ground beef. I toss in a can of diced tomatoes and a can of seasoned chili beans. Garnish with sour cream, cilantro and tortilla chips. Mmmmm!

Hmm, I still have leftover turkey . . . I think I will make some taco turkey soup tonight.

This sounds so good you can even crisp up tortillas in a pan after you cut them into little strips and float them on top.

Taco Soup

1 lb of ground beef
1 chopped onion
1 sm can of chopped green

Cook all of this together, then add:
1 can red kidney beans
1 can hominy
3 can stewed tomato's
1 can pinto beans
1 1-oz pkg of Ranch Dressing mix
1 pkg taco seasoning mix
water (I use Chicken Broth in place of water for more flavor)

Cook till good and hot! I top it off with chips, sliced green onions and sometimes cilantro

"GRINGO" TACO SOUP

So many of the Taco Soup recipes I found called for hot chiles or a mixture of other hot spices, & my family, while they love the flavor of Mexican food, don't like the fiery sensations left in their mouths. So this is my creation that has all the flavor but little of the "heat"!

INGREDIENTS:

1 lb lean hamburger
1 lb GOOD BRAND pork sausage (e.g. Jimmy Dean, Owens...)
1 LARGE onion, diced
1 pkg Taco seasoning mix
1 pkg Ranch salad dressing mix
1 28/29 oz. can diced tomatoes in tomato juice
2 14--1/2 oz. cans Pinto beans
2 4 oz. cans Ortega chopped Green Chiles (or your favorite brand - NOT Jalapenos)
1 CAN EACH OF THE FOLLOWING (Approx. 14-1/2 oz. size):

Small red beans
Chili beans (mild, or to taste)
Hominy (Golden or White)
Chili with beans
Diced tomatoes in tom. juice (in addition to large can)
1 qt. water as needed for crockpot capacity
Salt & Pepper to taste (I use Beef bouillon instead of salt for more intense flavor)
Non-stick spray

DIRECTIONS:

Brown meats together lightly, drain lightly, & add onion. Brown meats completely & drain thoroughly. Mix all ingredients in a crockpot or slow cooker that has been well-coated with non-stick spray. Mix thoroughly. Add water last, only enough for YOUR crockpot, so it doesn't bubble over. Be sure to rinse the cans of beans (NOT Chili beans) with water to remove the thick packing liquid). Cover & cook on LOW all day, stirring every couple of hours or so. May be served with tortilla chips & grated cheese if desired, although it's great just as it is. It's even better the next day after the flavors have had time to mingle, & the soup has thickened!

Please see my recipe for "GRINGO TACO SOUP" in this thread to find one with Ranch Salad Dressing in it. It's the only authentic way to make it, along with a pkg of taco seasoning & chopped tomatoes! I should know; after all, I live in the TexMex area right on the Mexican border! If a hotter soup is desired, simply adjust the seasoning to taste, & use jalapeno chiles for part or all of the green chiles.
