I recently posted a recipe for fresh basil tea lemonade -- a favorite of mine. Two days ago I decided to make some iced lemon thyme tea - rather than a lemonade. I love it! I cut and washed a handful/bunch of lemon thyme (branches and all), placed it in 2 cups of boiling water, brought it back to a boil, and let it steep covered for 10 minutes and drained - pressing the thyme leaves/branches hard. I added a tiny bit of lemon juice so that it wouldn't turn darker as it cooled -- and then put in fridge until cold. I didn't add ice cubes nor sugar. I love it!! Today I am increasing the water to 3.5 cups and increasing steep time to 15 min. Once cooled, I'll pour it over ice and see what the strength is. It is so wonderful to snip herbs from my deck planters and make fresh herbal tea.

i loved it! one good handful and 3.5 cups water, cooled, placed in fridge, and the poured over ice. the lemon fragrance and taste from the lemon thyme is so refreshing. be sure to add a little lemon juice immediately after draining -- otherwise it will darken. to my palate, it has a wonderful clean and refreshing taste.

Thanks for sharing. The lemon thyme is doing well this summer and begging for me to try this. I like to add snippets to veggie stir fry or soup... or just run my fingers through it and breathe in the wonderful aroma :)

I love lemon thyme, I add it to hot tea so I can have lemon flavor and still add milk, and the milk does not curdle.
Not to mention it grows like crazy and I don't have to do anything to it.
