Tortilla soup
I looked online for a recipe for tortilla soup. The ones I found were quite different. What is your favorite recipe? With corn or flour tortillas? Tortillas cooked in soup or added at end? If I want to make it a day ahead, I assume I'd hold the tortillas until reheating time?? Lots of questions for what should be a simple meal.

We use a package of Bear Creek Tortilla brand (found in the soup isle) in the crock pot. I add a pound or so of chopped up chicken (precooked) and a spoon or two of Pace salsa to it and let it cook all day. You can crumble up tortilla chips on top and add a dollop of sour cream before serving. My husband can't get enough of it!! Easy peasy!!

Sounds easy enough and Big Lots carries Bear Creek. I couldn't use a mix for me, but this is for a friend with no dietary limitations. Thank you.

Favorite recipe at my house: Cooked shredded chicken, 1 can black beans (don't need to drain), 1 can diced tomatoes, 1 can chicken broth, 1 packet taco seasoning, 1 cup frozen corn. Put it all in the pot, heat to a boil and simmer until you're ready to eat (what I mean is, you can eat it right away or let it simmer as long as you want). Sprinkle with shredded cheese, tortilla strips or chips, and a dollop of sour cream. This easily serves 4. I always double it and add 2 cans of everything because it's even better the second day.

Mexicali Soup
Saute’ 1 diced onion, 1 Tblsp diced garlic in 2 Tblsp butter or oil. Add 2 Tblsp chili powder. In crockpot mix 1 qt chicken broth, 2 cans cream of chicken soup, 2 cups milk, 3 cans Rotel tomatoes (mild or medium, your choice) Add shredded or diced chicken, shredded cheese, 1 pkg flour tortillas that were cut in strips. Before serving, add sliced black olives. |
I always use Joan Lunden's from Good Morning America. I add corn and black beans.

I used flour tortillas for my strips, but ended up not putting them in the soup because it was growing too big for three people so I sent them along for garnish. It looked and smelled wonderful. I did fry the chicken in the soup pot - one less pan to wash. I'd love some, but I don't think it'd be the same without tomatoes, peppers and corn. I'll have to try to see how close I can come. |
I love tortilla soup, and I like it spicy.
My recipe is pretty easy because most ingredients come from a can. 1 can dark kidney beans 1 can light kidney beans 1 can black beans 1 lg can red enchilada sauce 1/2-3/4 small can chipotles in adobo sauce (chopped) 1 container beef or chicken broth 1 can corn I throw it all in my instant pot and cook I add cooked shredded chicken, cheese, sour cream, chips, and cilantro to the individual bowls after cooking. |

I too cannot tolerate Mexican type spicy food....I like tasty, but not spicy...so any southwestern recipe in this kitchen is cooked without the burny add-on ( my mouth, tongue) in it. But, I like wasabi mixed with soy sauce when eating sushi..it is hot, but just for an instant, mixes with the food in your mouth and gives it extra taste, but instantly gone...not a lingering hot as southwestern type spicy. Never tried taco or tortilla soup......
