Turkey Leg Pot Roast for crock pot
 
We love this recipe. It's going to be 100 degress here today and I'm cooking this for dinner in the A/C.

3 medium potatoes, peeled and quartered
2 cups fresh baby carrots
2 celery ribs cut in 2 1/2 inch pieces
1 medium onion, peeled and quartered
3 garlic cloves, peeled and quartered
1/2 cup chicken broth
3 turkey drumsticks
Put veggies in 5-6 quart crock pot and put drumsticks on top. Add broth.
Sprinkle with salt and pepper to taste, 1 teas. thyme and 1 teas. dried parsley
Cook on low 5-5 1/2 hours or until meat temperature is 180 degrees.

I cut my veggies smaller because we like them well done.
I also added more broth and used fresh parsley just because I had it. I'm making Stove Top with it and we'll have a complete dinner with little work. Might even have cranberry. We'll definitely have leftovers so no cooking tomorrow either. Yes!!!!!

I do crock chicken/turkey a lot during the summer for the same anti-heat reasons!

Here's how I do it for a ....

CopyCat Deli Roasted Chicken
I put a bowl. dish or plate upside down in the crock, then set a whole chicken on top.
This lets the juices drain out of the bird, instead of the bird swimming in it!
Add seasonings/herbs to taste, inside or on top.
An onion or two inside the bird works well for flavouring. Also fresh herbs.
Sometimes I pour BBQ sauce overtop.

The veggies stay out til closer to the end of cooking, as they cook up pretty fast and would be mush!

For my crock, it takes about 3 to 4 hours on high.
I know, not precision, but ..... depends on your crock and the heat it throws ... and of course, the size of the bird!

When I do a whole bird I usually cook it in a clay pot but I'm going to try the crockpot. We're going to have days of more extremely hot weather. Just hope I keep my electric. So many are without since storms rolled through again last night and they're calling for more this afternooin. The crockpots work so good when it's hot.

DH is currently cooking a small turkey roast in our roaster oven. We keep it on our screened porch so it doesn't heat up the house. We use the crockpot a lot too.

I've made stuffed cabage rolls in the crockpot that were delicious. I want to try to use it more often. For anyone with a kindle, Amazon has "1001 Best Slow Cooker Recipes" for free right now. Lots of soups, chowders, stews, appetizers. Good book for free.

Thanks a ton. Just got the book and couldn't believe the kindle version was in fact free. Looks good.

I use 4 balls of rolled up foil, and does the same, then I just toss and don't have another bowl to wash.

We use the crock pot a lot with the heat we have in the Los Angeles valley areas. One of our favorites is done with a deboned turkey:
1 boneless turkey (defrosted, skin and string removed, cut into four large pieces)
1 diced onion
1/2 C diced celery
1 can cream of mushroom soup (sometimes I use golden mushroom)
1-2 cloves garlic minced
1/2 tsp tabasco sauce
dried dill
smoked paprika

Put the four pieces of turkey in crock pot, pour can of soup over the turkey and spread to cover. Mix together the onion, celery, garlic, tabasco together and pour over the soup layer. Add a dash or two of dill and smoked paprika to top of all. Cover and cook on high for about 5 hours, or low about 8 hours. When done, shred the turkey in the crock pot with two forks. Serve on buns as hot sandwiches or over rice or egg noodles for a plate entre. Leftovers heat well.

I downloaded it the other day, I was hoping for pictures with the recipes .....

The turkey dish sound delish. Will try this. Its been in the 90's here too.
