My husband doesn't know this...but I don't use ground beef for meatloaf. I have slipped ground turkey in on him and he doesn't know the difference.

!.5 pounds of ground turkey
1 cup of fresh bread crumbs - crust removed
1 cup of chopped onion
1/2 cup finely chopped carrot
2 large eggs, beaten
1/2 cup ketchup
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
2 tablespoons of worcestershire sauce
1 tablespoon of olive oil

saute the onion and carrot in the olive oil until tender. Gently mix all ingredients in a bowl until mixed. Do not over mix or the meatloaf will be tough. Form in to a loaf on a baking sheet. Mix the following ingredients together and baste the loaf with it.

1/2 cup ketchup
2 tablespoons mustard
2 tablespoons brown sugar

bake at 350 for about an hour.

I also use ground turkey instead of beef in my meatloaf, spaghetti, chili, etc. We like it much better.

This sounds really good. I have tried turkey meatloaf recipes before and they were always dry and lacked flavor. I will definitely try this one.

i use the turkey and always find that it is like a brick. i never thought of adding a second egg. I will have to try it. I used to use beef but have changed out almost all of the beef for turkey. except in bergers. I can't just bring myself to do it, even in our tacos we use the turkey. it just tastes better.

when making meatloaf of any kind..do not over mix..that is what makes it tough or hard.
