This is my favorite soup recipe!

Tuscan Soup

1# bulk Italian sausage- mild or spicy to your taste
1 onion, chopped
2 cloves garlic, minced
8 cups chicken broth
1 cup water
1 chicken bouillon cube
3 large potatoes 1" cubed(I use 8 red potatoes)
12 baby carrots, shredded
4 roma tomatoes, seeded and chopped
1 bunch fresh spinach, washed and chopped
1 can cannelini beans-rinsed and drained
1/4 cup half and half
salt and pepper to taste (I only add pepper)

In a skillet, crumble the sausage. Add onion and garlic and cook over medium heat until meat is no longer pink. Drain.

Place meat in a large pot and add broth, water, bouillon cube, potatoes, carrots, and cook until potatoes are cooked.

Add spinach, tomatoes and beans. Continue cooking until spinach and tomatoes are cooked.

Remove soup from heat and add half and half, and salt and pepper.
Makes 6 servings.

Thanks for sharing this recipe. DH is at the grocery store right now - I just called him and told him to get the ingredients I don't have so I can make this for dinner tonight.

I've been making a similar soup with kale for the greens. They said it was an Olive Garden knock off. Love it!

This recipe does sort of resemble the Olive Garden soup...but I think it is much better. Kale would be good too. It has a wonderful flavor, and full of healthy ingredients...well...except the sausage, but I think there is Turkey sausage that could be used.
