A patient told me this Thursday had to try it. Those who ate it said it was heaven
2 c. sugar 1 c. butter 6 eggs 1 box nilla wafer placed in food processor grind until powder 2 T. vanilla 2 c. coconut 2 c. pecans In a mixer blend sugar, butter, and vanilla together. Then add the eggs one at a time. Next combine the coconut and pecans. Place in baking pan(I used 9x13) bake at 350 for about 1 hr. |
Sounds good.

what do you do with the nilla wafers after they are ground up? Are they used as a crust of some kind?

I am wondering too what to do with the wafers..Are they mixed in the batter?

I baked this cake last evening for a cake walk. I like to put it in the freezer for a few days, this seems to lock in the moisture. I have had this recipe for years and it is one of the best cakes I have ever eaten and so easy to bake.

a step was left out of this recipe. The vanilla wafers are used in place of flour.
Here is the recipe I use. Preheat oven to 275 degrees. 1 & 1/2 sticks butter, softened (I do not use margarine) 6 eggs 1 & 1/2 cups sugar 1/2 cup milk Mix well Add: 1 cup chopped nuts 7oz. pkg coconut flakes 1 box vanilla wafers, place in blender and blend until powdery, like flour Mix all the other ingredients well. Pour into a bundt or tube pan, bake for 1 & 1/2 hours.

She never said anythign about the milk but it makes since. But I made it the way I printed it and it was so sinful. I am wondering how it will would taste with the freeze dried apples, walnuts and dates in it. Also I like the idea of using a bunt pan, this also wasn't mentioned
