Onion Dip
1 large onion 2 T. olive oil 1 c. raw cashew pieces dash pepper, cayenne, nutmeg 1/2 t. salt 1 T. nutritional yeast 1/2 c. soy milk 1/4 c. vegenaise 2 T. lemon juice 1 t. miso green onion to garnish, or crispy fried shallots, or better yet both Cook onions in olive oil over medium-low heat until they're sweet and brown and melty. In the meantime, grind nuts, along with the salt, pepper, cayenne, nutmeg, and nutritional yeast in a food processor until quite fine. Add the onion, lemon juice, soymilk, and vegenaise and blend until smooth and creamy. Refrigerate until ready to use. Garnish with green onion and/or fried shallot. Serve with potato chips. |
