My DH was saying he really missed meatloaf but not something we cook much in the UK. Anyway I looked up recipes and took things from various ones I liked the sound of and 'had a go'. He thought it tasted just like the one his grandma used to make so has become a firm favourite with mashed potatoes, and vegetables with a mushroom gravy...
2 Packets of Veggie Patch Meatballs Minced (or portabella burgers) 1 Cup Fresh Breadcrumbs (or seasoned stuffing) 1/4 cup Worcestershire Sauce 2 Eggs Mushrooms, Finely Chopped Yellow and Red Pepper, Finely Chopped Spring Onions, Finely Chopped Mrs Dash Original Blend Salt Pepper Glaze 1/2 cup Heinz Ketchup 4 tblsp Brown Sugar 4 tblsp Honey 2 tblsp Worcestershire Sauce Preheat oven to 400 degrees F In a large bowl, combine minced meatballs, bread crumbs, 4 spring onions, few slices of red and yellow peppers, four mushrooms, worcestershire sauce, eggs, herbs, salt and pepper, half of glaze mixture. Put in to well greased loaf tin. Bake for approx 35 minutes. Put remaining glaze on top of loaf. Heat grill (broiler) to 500 degrees F and cook for approx. 10 minutes. |
