Waldorf Salad
 
Does anyone have a GOOD recipe for Waldorf Salad.I would like to fix it for Easter.

My favorite holiday salad
1 large red apple cored and diced
3 stalks celery, thinly sliced
1 cup red grapes, opt
1/2 cup walnuts, chopped roughly
1/4 c mayonnaise
1 t sugar
1 tsp lemon juice.

uMix fruit and nuts together, mix mayo, sugar and lemon juice, pour over fruit and mix well. Can serve over mixed greens if you like.

2 med. apples, coarsley chopped about 2 cups.. 2 med stalk celery chopped. about 1 cup.1/2 cup mayo.1/3 cup coarsley chopped nuts.toss together and serve on salad greens. or you can add pineapple. also add marshmallows.

Our favorite is apple salad. I'm not sure what qualifies it as a Waldorf salad. The walnuts, I think.
I noticed that some of you use celery and you could add either of these if you like.
Anyway, here is what I do.
1/2 apple per person
1/2 banana per apple - that is how I start to get the amount that I want.
For instance:
4 apples
2 bananas
Maybe a cup of grapes halves - or dried dates, raisins, etc.
1 cup of mini marshmallows
Dressing is about 1/3 Miracle Whip and 2/3 Cool Whip
I like a generous amount of the dressing and just scoop it on - don't usually measure.
Okay, now I'm cooking like my grandmother.
It's a favorite with my family.

I make Waldorf Salad with. apples, celery, walnuts. My dressing is whipped whipping cream.Gently fold it in. I know it's not traditional but Wow you should taste it. Yum

This recipe is a little different in that it is frozen. It's easy to make ahead of time.

Ever-Ready Waldorf Salad

1 (1 pound, 4 ounce) can crushed pineapple
3 eggs, slightly beaten
3/4 cup sugar
1/3 cup lemon juice
1/4 teaspoon salt
3/4 cup diced celery
3 medium-size, unpeeled apples, diced
3/4 cup chopped walnuts
1-1/2 cups heavy cream, whipped

- Drain pineapple, reserving 3/4 cup juice

- Combine juice with eggs, sugar, lemon juice and salt. Cook over low heat, stirring constantly, until thick. Cool

- Add pineapple, celery, apples and nuts. Fold in whipped cream. Turn into two 9” x 5” x 3” loaf pans

- Place in freezer. When frozen, unmold, wrap, label, date and return to freezer. Recommended storage time: up to one month

- To serve, cut in serving-size portions and place on lettuce-lined plates. Garnish with spoonfuls of salad dressing and insert slices of unpeeled red apples, skin side up, in a fan shape.

- Makes 12 servings

Note: Apples soften, but give salad a pleasing flavor; celery stays crisp
