what can I do with this?

Any idea what to do with this? Its a roast cut up in bite sized pieces, sweet red peppers, onion carrots. Spoon over pasta, rice any ideas?

Maybe chop it up finer and call it hash. Or add gravy (southern, can't help it) and spoon over mashed potatoes.

You could freeze it and send it to me with dry ice. LOL
It would make good burritos.

Add beef stock and cook in the crock pot for stew. Serve with baking powder biscuits. Put in a flat casserole dish and top with mashed potatoes for Shepard's Pie. Put a pie or biscuit top for beef pot pie as someone mentioned.

I would fry up a bunch of potatoes and stir it in with some gravy and call it hash I do it often! Yum!

I decided to make burritos with it. My daughter is on a diet and its really hard to make things that she can eat. We have 100 calorie flour tortillas that I know she can eat. Thanks for your suggestions.

add some cream of mushroom soup or any cream soup of your choice and use as desired ...

make a big old pot of soup with it. Biscuits and salad on the side.

1)Add canned and diced or fresh cherry tomatoes, heat and use over rice. 2) Add beef broth for soup. 3) taco salad by adding lettuce and cheese? You have a super, Basic there.

pour some mushroom soup/no water and a can of tomato soup/no water and a pack of DRY beefy onion soup mix/no water. and add 4 cut up potatoes/cooked because your meat looks cooked already and let it simmer a while. I have a receipe that is like this but since you are already half way there-just add the soups. I know it sounds weird but it really is good. I just have never added any peppers.

You can make a nice gravy and put it over rice or potatoes, or leave it as is and serve as a side to them. It looks great just the way it is.

1. Add beef gravy and peas top with buscuits dough or pastry crust to make pot pie, 2. add tomatoe sauce, frozen peas and a touch of beef broth top with mashed potatoes and make shepards pie, 3. Fry up some potatoes mix it all together call it hash and top with fried or poached eggs, 4. Cook chopped up potatoes in beef stock mix in your beef and veggies add frozen green beans and a small can of your favorite tomatoes simmer till flavors blend and call it stew. 5. Chop it all very fine mix in just enough gravy or stock to moisten, make pie crust and roll out into small 5 or 6 inch circles put a good amount on one half of the dough fold over and crimp bake till golden brown.

Yum! In this area we would make a brown roux (or get some from a jar -- local brands are delicious), mix it in with a little broth to form a gravy. Eat it over rice or stir in a little pasta.

Wow, that looks so good. If it was on my stove, I would add a jar of Prego, or Ragu Spaghetti sauce and some cooked, sliced zucchini and about a cup or two of cooked Rotini Pasta. Oh my gosh, now I am going to go make this. My mouth is watering. ha

Make a soup and put it in it. Good on these cold days we have been having if you haven't used it already for something else.

That was going to be my suggestion, add a bit of salsa an put it in a tortilla.
