my favorite is a recipe hubby brought home from a neighbor, over 40 years ago. he'd been over at their house, and the wife was pulling delicious cookies out of the oven, and he was eating them as quickly as she brought them out. she called the "kolatchkies"--different than the filled rolls. they are a lovely rolled base, cut into squares, then filled with whatever filling you've got around, and then folded like an envelope. i like them with poppy seed filling, hubby likes them with either a raisin filling, or raspberry jam. they are wonderful, if a bit of a pain in the neck to make...

Yes, just about any cookie dough (I know, I shouldn't be eating raw eggs.) but whether it's fresh or has been refrigerated or even frozen for later... frozen is the best! one small spoonful at a time ;-)

Homemade peanutbutter with mini chocolate chips. Best of both worlds!
