What's for Dinner? HELP!!
 
It's Friday and we ate pizza last night.. Sooooooo what's for dinner tonight? MMMM I don't have a clue and I work til
4:30.... HELP!!

I put a crock pot of veg. soup on and will use it for a couple of evenings. It is cold here so any soup goes good in the evening.

There's a crock pot thread on here.We like breakfast for dinner,grilled cheese with soup or salad..It's just as easy to cook two meals,then freeze part of the main dish for another time.Most ppl love pasta & it's easy to prepare. As long as the family is fed,it doesn't have to be a big deal every day.Kids are happy with cereal,Mac & cheese from a box or frozen pizza.If you need specific recipes,just speak up.

When I need a quick weeknight dinner I make my marinara and toss it with whole wheat pasta
Or, here is a no sauce olive oil version
Another quick weeknight meal is Penne with Vodka Sauce

Bean soup
 
I made a big pot of bean soup! Sure is cold here in Jersey! All we need is a loaf of Italian bread!

Friday night is always Fish Fry Friday and we go out with 3 other couples. Today I have a crock pot of loaded potato soup cooking. We are going to the Vintage snowmobile races and will return to a hot bowl of soup.

When I worked away from home, creamed ground beef (or substitute favorite meat) on homemade biscuits was my fast favorite---run into the house, pre-heat oven to 450, grab beef from freezer and toss into microwave to defrost, mix buttermilk biscuit dough, knead 12 turns and pat it out on cookie sheet. Divide into 12 portions with a big knife and into the oven for 12 minutes. Heat the big iron skillet and in goes the thawed beef, salt & pepper and when browned a 1/4 cup of cornstarch stirred in. Stir constantly and slowly pour in a can of evaporated milk and a can of water. Cook and stir to a boil and cook one minute longer. The 12 minute biscuits should be ready so pull 'em out. Then biscuits in a basket and burger in a bowl. If pressed for desert, increase the biscuit recipe by 1/2 and pass the butter and jam or honey.

With local grass-fed beef and low fat evaporated milk and homemade biscuits it was low fat. Seasonal or frozen veges on the side. This was less than a 1/2 hour start to finish and could be speeded up by using commercial biscuit mix.

Tonight it will be another meal from the bottomless vegetable beef soup pot.

We are having a b-day dinner. My husband's birthday is Monday. And he asked for a Steak, baked potato, caramelized red onions and sauteed mushrooms. I spied some zucchini and yellow squash too. But I may save that for tomorrow's dinner.
