A brown rice - black bean bowl, perhaps. I need to do a little inventory of my cupboards to make sure I have everything we need. We are trying to boost our "good" cholesterol.

I made roast chicken with a rosemary/thyme/garlic compound butter stuffed under the skin of the breast. It was wonderful. The best roast chicken I've ever made. Here's the recipe and video..... Ultimate Roast Chicken

Old fashioned beef stew. (BHG recipe)
Roasted potatoes with rosemary, sea salt & a little olive oil.
Steamed endive.
Fall fruits compote cooked on stove. (Apple, pear, plums, ginger, lemon juice and a little brown sugar.)

Pasta and cheese sauce from jar.
Salad: romaine, cucumber, tomatoes, red sweet bell pepper, sweet pickles, green and black olives. Homemade vinaigrette.

I'm going to Nerys' place for that fall fruit compote! Yum!

It's definitely soup and chili weather, even here in AZ - last night I made a super quick ground beef chili (by quick it still took an hour, but not hours, to cook!) and then I turned around and made a dry rub and roasted a chicken so I can make soup soon. I am *not* always that productive!

Let the chicken cool and simply had warmed fresh bread with chili. Sometimes the simple things please most.
