I made roast chicken with a rosemary/thyme/garlic compound butter stuffed under the skin of the breast. It was wonderful. The best roast chicken I've ever made. Here's the recipe and video..... Ultimate Roast Chicken

Roasted potatoes with rosemary, sea salt & a little olive oil. Steamed endive. Fall fruits compote cooked on stove. (Apple, pear, plums, ginger, lemon juice and a little brown sugar.) |

It's definitely soup and chili weather, even here in AZ - last night I made a super quick ground beef chili (by quick it still took an hour, but not hours, to cook!) and then I turned around and made a dry rub and roasted a chicken so I can make soup soon. I am *not* always that productive! Let the chicken cool and simply had warmed fresh bread with chili. Sometimes the simple things please most. |
