I love coddled eggs. I use silicone egg cups, I coat the cups with butter, crack an egg and add seasoning and use the bake setting on the air fryer.

Tonight is regular lasagna for me and Keto lasagna for the other half. I tried a new recipe for the keto noodles so we'll see how they hold up. And some ceasar salad on the side.

Tonight is whatever you can find you want to eat. I decided to read the rest of the evening. Husband has head in fridge now.

Ginger, we do a lot of substituting cabbage for noodles -- either cooked or crunchy. Maybe simple layers of napa cabbage leaves might make a good keto lasagna, or steaming/parboil the green cabbage on special right now for St Patrick's day.
It is a pretty icky day here and I had planned some various stuff. Instead, we are going to take a road trip in a slightly different direction and end up in Springfield. We have a couple of BBQ places to check out (hubby's version of road Keto), and we are going to at least drive by a couple of bowling alleys. If we are close, we might drive by the capitol but that isn't the point of this trip. Will be about an hour each way, plus a little extra rural exploration time :) Day is cold and gray (it was snowing earlier) and not suited to the dogs, so we'll leave them safe and warm at home. That translates to: I expect bought BBQ for dinner tonight! |
Iceblossom, there is a version of Lasagna from Istria (think the far north eastern corner of Italy) that uses cabbage leaves instead of pasta. I think of it more like deconstructed holupchi (cabbage rolls) with cheese. It's an interesting take on the dish.
The keto noodles got the DH's approval. A mixture of eggs, shredded mozzarella, parm, and cottage cheese with italian seasoning, garlic and onion powder. Blended until smooth and spread 1/4 inch thick on parchment paper before baking. They will do for lasagna but I have yet to find a palatable spaghetti type noodle alternative--and believe me, we've tried a few!! Tonight is shrimp stir fry. Yum!! The local joint was an old neighborhood spot, hand cooked food. They were out of most of our first choices, but I got half a chicken and he got some (sauced) beef and a sausage. Maybe not exactly what we were hoping for and very midwest (read sweet). I splurged some carbs on fried okra which was very well done!
Hubby says to try bzoodles, from his 2 keto dudes. It requires a special ingredient that he feels is ok. But you might want to do some research... I developed a lasagne recipe that uses spinach instead of noodles. 3 eggs, 3 cups cottage cheese, and 1 cup parmesan cheese instead of ricotta cheese.
