Several have mentioned beaters and bowls must be grease free. Very important to use glass or metal, no plastic. no matter how well a plastic bowl is washed it will still have grease.
We go thru this every year with out 4H kids making royal icing. As soon as we mention plastic the moms smack their heads"I forgot about that"
