Seems that yellow tomatos love this Indiana weather. Most of my red tomatos have a fungus and are dying. Does anyone one have a good canning recipe for yellow tomatos. I made a salsa last night, only 7 pints, mixed a few red tomatos with mostly yelllow.

No good recipes on canning but love yellow tomatos with fresh basil, fresh motzzerella (sp)drizzled with balsmaic vinger. All you do is slice your tomato in half, place the other stuff on it top with the other side of the tomato and enjoy.

You can uses the yellow ones the same as the red. If you do any canning with the yellow tomatoes, the canning books say to add some sort of acid. I use vinagar or lemon juice but you can also use the powdered stuff. I also mix my yellow ones in with the red for my salsa. I canned a couple of quarts of yellow tomatoes whole last year but the kids complained when I added them to chili, said it looked funny.

I like to cut them in half drizzle with olive oil and herbs and broil or grill them :D:D:D

You could use them in shish ka bobs on the grill. It would be so pretty!

I have always heard that you can't can yellow tomatoes because they won't keep. Not enough acid. Libby
