Zucchini patties
 
Preheat oven to 400*. Spray cookie sheet with cooking spray or line with parchment.

1 cup packed shredded zucchini (squeeze out excess water)
1/2 cup finely shredded sharp cheddar cheese
1/4 cup parmesan cheese
1/4 cup Italian seasoned bread crumbs
1 large egg, lightly beaten
1/2 to 1 tsp. minced garlic

Mix all ingredients. Form into patties and place on prepared cookie sheet. Sprinkle with salt and pepper. Bake at 400* for 10 minutes. Turn patties over and cook another 10 minutes or until golden brown and crispy around edges.
Serve hot as a side or as an appetizer!
Makes 8 - 10 patties

Made these last night and DH doesn't like cooked zucchini but he went back for seconds!

Yesterday made 4mini loaves of zucchini/blueberry loaves...found recipe at allrecipes.com. It has my gold star!

That is almost the same as a recipe I use but I fry mine in some coconut oil in my big iron fry pan. Have a fresh zuke to make some more, they sure are good.

mmmm yummy saw this to late but tomorrow for sure, was going to make zucchini bread I'll make this instead thanks for the recipe

Made them tonight and my squash hating husband ate a bunch of them...great recipe...thanks...need new things to try. I didn't have zucchini so substituted yellow and it worked well...

We always fry ours like latkas. They come out great and if you prepare them simply with grated zucchini, grated potato equal amounts one or two eggs salt and pepper (garlic if you like also) they come out great.. and you can keep them warm in the oven at 250 degrees as you cook them, eat them with apple sauce or sour cream and YUM. they are a wonderful food addition. so many ways to cook the same thing lol but boy are they good.

I, too, just fried them on top of the stove. Left out the garlic and used crushed bagel chips for the bread crumbs. Most delish! Will definitely make them again. Maybe just a bit less cheese so the zucchini flavor comes through.

Do you think the white patty pan squash would work the same as the zucchini. I know you can substitute the yellow for anything zucchini but wasn't sure about the white.

If you have big zucchini (as in a couple got away from you in the garden) - you can hollow the seeds out of them and stuff with a meatloaf mixture, topped with Parmesan and baked in the oven. No site to point to here but have just used an old meatloaf recipe and came out good. :-)

My children would ask for Zucchini Patties instead of popcorn while watching movies. I always fried mine (sauteed) really, but baking would be so much healthier. Thanx for the idea

This is like the zucchini squares recipe I make. You put the whole thing in a baking pan and cut them into squares and freeze them individually for a quick lunch while you are quilting. That and a salad and a cup of hot soup is a perfect sized for me.

I think my recipe has some bisquick in it and makes a crust by itself.
