Zuchinnie Fries
While watching Rachel Ray I saw her making these then got busy and did not get the whole recipe.. But here is what I do. Since we have an abundance of zucchinni right now this is a good and heathly way to eat them
2 Med zucchinni cut in half long ways and and scoop out the seed, then cut in half the other way and cut into strips about the size of a french fry Dip in egg white, takes about 2 Roll in Panko bread crumbs, season with salt pepper and a little garlic salt Place on a a parchment covered cookie sheet Bake at 400 for about 20 mins We use light Honey Dijon Mustard salad dressing to dip them in. You could use ranch or any one that you like, or they are good just plain Yummy, my husband love them |
Thanks for this recipe. I usually just cut into rounds and saute in a little olive oil until slightly crisp. But this looks easy and quite tasty.

I use the pampered chef recipe found online, except my nephews suggested we roll them in
smashed up Funyums. Wow, they were crispy and delicious! |

You may want to google zucchini fritters. Wonderful - even picky hubby will eat them.

My family is in love with squash patties. You can use squash or zucchini. With onions, cornbread, egg. I freeze a whole bunch and then get out a few at a time to cook. Gotta love summer harvest!!!!
