    Hi Fellow Quilters, Cooks and Friends:
    I've been around the forum for awhile and somehow missed the "recipe" thread...I'm the recipe queen! My new favorite soup recipe is soooo good so I'll share it today.

    Quick 'N Easy Veggie Soup
    1 pd. hamburger-browned and crumbled
    1 medium onion - chopped and cooked with the hamburger
    2 Cans (about 15 -20 ounce size) RANCH STYLE BEANS-no substitutes
    2 Cans Minestroni soup (regular sized soup can - about 15 oz. size)
    2 Cans VEG-ALL mixed vegetables (also about 15 to 20 oz. size)
    1 Large Can (about 28 oz. size) ROTEL Tomatoes with Chilis-can use regular tomatoes without chili's but we like the flavor the chili's give the soup.

    Put all the above ingredients in a crock pot on low and cook for 4 hours. Can also make on the stove but you want the soup to simmer for awhile to meld the flavors. I like doing it in the crockpot because I can dump everything in and leave it without worrying that the pot will boil dry. This recipe was one in a crockpot cooking recipe folder years ago.

    Serve with a green salad and some crusty French Bread or Artisan breads of your choice. Wonderful, "comfort" food!

    Oh! Ruth, thank you. Glad you liked it. We love it and I make it often...have about a quart in the refrigerator right now that is earmarked for lunch in a couple minutes. :lol:
