Turkey Apple Salad
2 cups chopped light turkey meat
1 medium apple cored and diced
1 cup seedless grapes, sliced in half
2 medium stalks of celery, chopped
4 cups chopped romaine lettuce
Dressing
1 1/2 Tbsp raspberry or balsamic vinegar
2 Tbsp olive oil
1/2 tsp ground coriander
1/4 tsp salt
1/4 tsp pepper
In a large bowl, combine turkey, apples, grapes and celery. In a small bowl, combine dressing ingredients and pour over turkey mixture and toss. Arrange lettuce on plates and top with turkey mixture. Serves 4. Each serving is 3 points.

Gosh, that sounds good!
Here's a recipe for an old-fashioned favorite:
Waldorf Salad
3 red apples, cored and diced (keep the red skin on for color, if you like)
1 cup thinly sliced celery
1/2 cup chopped walnuts
1/2 cup raisins, plumped (cover with water, heat on stove or microwave until very warm, let sit until cool, drain and dry. They'll be nice and soft and plump)
Dressing
1/3 - 1/2 cup mayo
1 Tbls. sugar
1 Teas. lemon juice
1/8 Teas. salt.
Start with smallest amount of mayo. Combine all ingredients and stir to dissolve sugar. Combine with apple mixture and chill until serving time.
(If apples seem too dry, add the rest of the mayo.)
