Can you please send me some good and quick recipes for breakfeat casserole. I need to take several to Christmas breakfast parties.

Here's one we like:

Breakfast Lasagna
8 large (or 6 extra large) eggs
1 lb. sausage
8 oz. shredded cheddar cheese
4 oz. shredded Mozzarella cheese
2 large potatoes (abt. 2 lbs.)
2 c. salsa
1/3 c. water

Thinly slice potatoes and fry (like hashbrowns). Season with salt and pepper to taste. Spread evenly in bottom of 9 x 11. Cook sausage until done and set aside. Mix eggs with water. Using a 4 oz. ladle, cook sheet of eggs in a square pan. Place sheet of eggs on top of potatoes, sprinkle 1/4 sausage, 1/4 cheddar. Repeat eggs, sausage, cheddar. Spread with 1/2 salsa and top with 1/2 Mozzarella. Repeat eggs, sausage, cheddar layers 2 more times (4 layers in all). Spread with remaining salsa and top with the rest of the Mozzarella. Bake 350* until cheese begins to brown.

It's a little time-consuming to prepare, but it is yummy! If your family likes spicy, you can crank it up a notch with spicy sausage and salsa.

Finnish Pancakes

6 large eggs
1 quart milk
4-5 tablespoons sugar
1 cup flour
1 stick butter

Melt butter until brown in a 12x16” Pan. Mix all other ingredients and pour over butter.

Bake at 450* for 20-23 minutes. Will be puffy and browned. It will collapse as it cools, like a soufflé.

Serve immediately with maple syrup or jelly.

Strawberry French Toast
8 servings

8 slices of French bread cut 1 1.2 inch thick-get GOOD French bread not the soft crust kind (It gets too soggy)
5 eggs
3/4 cup milk
1 teaspoon Vanilla
5 cups loose pack frozen strawberries
2/3 cups sugar
1/2 teaspoon cinnamon

Combine milk, eggs & vanilla. Dip each slice of bread for about 30 seconds each side.
Place on baking sheet and let stand for about 10 minutes to absorb the egg mixture.

Grease a 13x9x2 " baking dish. Spread frozen berries evenly over bottom. Combine sugar and cinnamon in a small bowl & sprinkle 1/2 cup over berries. Carefully place bread slices on top and sprinkle remaining sugar/cinnamon on the bread.
Bake 450 degrees for about 15 minutes or until the bread is golden brown.
Place bread on plate and top with the berries and syrup.

This is Charleston Breakfast Casserole. Recipe from Allrecipes.com

INGREDIENTS

* 12 slices bacon
* 1/4 cup butter, melted
* 3 cups croutons
* 2 cups grated Cheddar cheese
* 6 eggs
* 1 3/4 cups milk
* 1 bell pepper (any color), diced
* 1 tablespoon prepared mustard
* salt and pepper to taste

DIRECTIONS

1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
2. Preheat oven to 325 degrees F (165 degrees C).
3. Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
4. Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
5. Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

This is not exactly a casserol but we make a large bowl of scrambled eggs, add cooked breakfast sausage, chopped up, and medium salsa

This can be served with biscuits, english muffins. or my a\favorite flour :D :D tortillas

Breakfast Casserole

5 lbs. grated potatoes
8 cups milk
12 eggs
2 cups each cooked sausage and ham
2 cups each cheese and cooked bacon

Spray two 18 x 10-inch casserole pans. Spread grated potatoes, add meats and cheese and mix lightly. For each 25 servings, add 1 teaspoon salt and 1/8 teaspoon pepper to milk. Beat eggs and milk, pour over potatoes. Bake at 350 degrees until set - 1 to 1 1/2 hours.

When I have any kind of leftover stale bread, I tear it up and mix with cooked sausage, bacon, or ham. Mix eggs with a little milk, salt, pepper, a pinch of dry mustard and whatever else you like, mushrooms/peppers/ Always mix the night before and bake in the morning for a hot out of the oven treat
