Default Fresh tomato recipe

For years, I have made a 'salad' with diced fresh tomatoes,
diced onion, some cilantro or parsley & a dab of mayonnaise.
This is a great way to use a lot of tomatoes quickly and it is
so good with just a little mayo, so still low calorie.

Yum, Yum to all your recipes. I enjoy reading this section for new ideas. Always interesting to note the home state of the writer.

My mother would slice tomatoes (halves), slice cucumbers, slice onions (halves), add fresh mint and Italian dressing. She kept this salad in the ice box (yes, the ice box) as it lasted a long time and we could get some out, dunk our Italian bread in the dressing and have a yummy salad whenever we wanted to. Oh, I miss my mom.

I do fresh tomatoes, fresh mozzarella cheese, basil and top it with balsemic vinegar, add some hard crusty rolls and I have a dinner. Learned this in Italy.
