Knitty Kitty makes these for us. Major good. 5 stars

Bake on greased cooke sheets 12-15 minutes at 350 degrees, you can use parchment paper so you don't have to grease it.

2 cups butter or margarine 2 cups oatmeal
2 cups white sugar 2 cups corn or bran flakes
2 cups brown sugar 2 cups chopped pecans
4 eggs 1 cup flake coconut (optional)
1 tss vanilla 1 pkg 12 oz chocolate pieces
4 cups flour 1 cup raisins
1/2 tsp salt 1 pkg peanut butter chips
    2 tsps baking powder (optional)
    2 tsp baking soda

In a very large mixing bowl, beat the margarine, salt, sugars and vanilaa togethers until blended. Add eggs and beat until smooth. In a separate bowl combine flour, salt, baking powder, and baking soda, gradually add to sugar mixture and stir well.
Stir in remaining ingredients in order listed. Drop cookie with 1/4 cup measure ( like an ice cream scoop) onto lightly greased cookie sheet and bake as above.

This recipe is very flexible, if you don't like one of the ingredients, leave it out and add something else. For instance, skip the peanut butter chips and use white and dark chocolate, two kinds of nuts instead of one.

Refrigerate 3 hours so cookie will hold it's shape if the batter is chilled. Then bake.

This makes a big container to last the wholre retreat or meeting or guild. It's a lot and I have no idea how to shrink it so freeze dough and use when ready will work.

Judy brings these to Project Linus and retreats. Major sugar fix.

Makes 3-4 dozen extra large cookies. Hence Texas COw CHips. LOL

Egads - don't know if I have a bowl big enough to mix these but they sure do sound good.

Debbie, your recipe looks delicious. I am just getting ready to whip up a batch of dough. In so doing, I reorganized your recipe. I hope I have not offended you by doing this.

You said you didn't know how to reduce the amount of dough it makes so I included 1/2 of each ingredient in parenthesizes in case you want to make a smaller batch. Can't wait to try them. :-D

PS: you had salt listed twice so I did remove one of those.

    Here is your recipe:

I made these over the weekend and WoW, WoW, WoW! Watch out, they are addicting. DH and I had a hard time staying away from them. I didn't have any pecans or the cereal. So, I improvised with no nuts and my fave: Kashi GOLEAN Crunch cereal. MMMM... Good!

    Thanks, Debbie, for the recipe.

It is our new favoritest cookie! Even ranks above Oreos.

I flattened em with my hands a little

15 minutes leaves them chewy; a little longer makes them a little crunchy
